These questions will be an swrred tomorrow by the House wife. Answers to Yesterday's Questions. 1. The name currant was first applied to the small raisin used in cookery, which was named from Corinth, the city which first exported them. The currant bush and fruit were turned from the dried variety, which is really a small grape, dried like a raisin. 2. Croquettes should not be kept hot after they have been cooked, but should be allowed to cool nd then reheated by plac ing them in a hot oven with the doer open for just long enough to heat them through. This keeps them crisp. Keeping them hot makes them soggy. 3. Hang the marabou over a ran of actively boiling water. Lesve it there for half an hour, turning and shaking frequently, so that it is all thoroughly steairled. (For Six.) Three cupfuls ice cold, strong cof fee. One cupful cocoa, made with milk. . Two tablespoonfuls cream. 'Four tablespoonfuls powdered su gar. Combine ingredients in order given in a pitcher, stir well and serve in glasses or a chocolate set contain ing a little crushed ice, with or with out a topping of sweetened whipped cream. . Frosted Coffee. Six cupfuls cold, clear, strong cof fee, threefourths pint vanilla ice sream. To serve for six people, pour the coffee ice cold into a pitcher. Place on a tray, containing the glasses, a shaker and a bowl for the ics cream. Put two heaping tablespoonfuls of ice cream into the shaker, together with a cupful of the coffee, shake until cream is dissolved, pour into a glass and serve. This should be done in turn for each guest. - Any little sugar cooky or fruit flavored water-is good wit hthis. : Iced Spiced Coffee. (For Six.) Six cupfuls clear, strong eeffee Twenty-four whole cloves. One five-inch stick of cinnamon. Three-fourths cupful heavy eresm, whipped and sweetened. Add spices to coffee, boil five minutes, strain, add sugar and chill. Serve in glasses, each of which should contain a little crushed ice. and top with cream. Dust with powdered cinnamon. This is par- (For Six.) ticularly good with little fruit or nut cakes. Coffee Caramel Sundae, j One quarj coffee ice cream. One cupful caramel sauce. One cupful heavy cream, whipped ind sweetened. . , , Three-fourths cupful shredded, toasted almonds.1 Put a medium-sized scoopful of ice cream into each undae glass. Pour over each serving two table spoonWs of caramel sauce, top with the.yhilkped cream aii'd strew over the almonds. Coffee Praline Sundae. One quart 'coffee ice- cream, cof tee syrup, - three-fourths cupful whipped cream, sweetened, one-half cupful, praline powder.. To make the praline powder, combine half cupful granulated sugar with half cupful blanched almonds in small, smooth frying pan. Stir . together until sugar is liquified or, caramel ised,, but take care it does not be come dark', brown, but merely the color of maple syrup. . No business, man would permit his business to be run for even a week without a careful weighing against each other of incoming and outgoing funds, yet the pome o many a good business man lianas alone without any definite plan of accounting. The homemaker will find her enthusiasm for accounting increase as she comes to see how it discloses just the pro portion of the income that goes into different items comprising the house hold expenses. When she finds that minor items are infringing on the rights of more important things, she knows exactly where to eliminate and where to increase expenditure to obtain a balanced result. The division of the family ex pense under general headings usual ly puts' food first as the most im portant single item. Shelter, which may be rent or interest on invest ment where property is owned, is next, and is capable of great varia tion when taxes and insurance and repairs must be included with it. Running expenses include heat, light, furnishings, and help. Two indis pensable items on the list are savings and .advancement, for with savings accounts and safe investments of manv kinds within reach, and with ! educational and recreational advan- tage plentiful, no family should fail to, save some portion of its income nor to spend some portion of it for advancement. Witji'a Can of Salmon ' There are many ways of serving salmon besides putting it on as it comes from the tin. Remember that it should be taken from the tin at once, and if used for croquettes, salad or other made dish it should be taken from the oil that surrounds it in the tin. Also remove any large bone and skin or fat To make a delicious salmon salad, pick -aoart the salmon meat with a "Silver fork and mix with mayonnaise dressing. The ready made sort an swers the purpose. Have ready beds of lettuce and place a generous spoonful on each bed. Garnish with a little clear mayonnaise and a sweet pickle. Jhis is delicious served with salt crackers that have been buttered and peppered and then browned in the oven. ' Tempting' croquettes are made thus: Have ready mashed potatoes and after putting the' contents' of a tin of Salmon into a mixing bowl add a like amount of mashed potatoes. ' Juice eight 'oranges, one cupful lime juice, one large can shredded -pineapple, three and one-half cup fuls sugar, five cupfuls water, ice water. Boil the sugar and water together for 10 minutes.
