Keep a piece of cardboard about the size of an ordinary blotter on the side of your stove. You can put spoons or forks that you are cook ing with on it. and when you are through just throw it away. Cut the fish in strips and soak in cold water for an hoffr. Put on to cook, and when the water gets to the boiling pointlet it simmer gent ly for 25 minutes. Drain and flake the fish.'- Add a cup of heavy cream sauce and two hard cooked eggs sliced very thin. Put all in a greased baking dish sprinkle with fine white bread crumbs and bake for a few minutes. Before serving add a dash of red pepper and some -chopped parsley. ' Salmon Cutlets. ' Mix equal parts of, cold flaked canned salmon with hot mashed7 po tato. Season with salt and pepper and form into cutlers. Dip in egg and bread crumbs and fry in deep fat. When the salmon is removed from the can it should be drained well, and remove the skin and bone, Serve with ereen peas buttered and garnish with lemon and parsley. White Cake Without Any Sugar. Into a cun out one egg, beat well; add three tablespoonfuls of sweeten ed condensed milk, pinch of salt and rill ud the cun with water, beat well; add two cupfuls of flour with two teasDoonfuls" baking powder, or, three of drv veast powder, sifted,! flavor to taste. eat well before putting in well greased pan. Very light and a good cake to make in these hard times to get sugar. Conderhed Milk Cake. Two eggs, beaten light; one-half can condensed milk, one-tnird. can water, one-quarter cupful sugar,' one quarter cupful of lard, one and three quarters cupfuls flour, three rounded teaspoonfuls baking powder, one quarter teaspoonful salt, flavoring. Fudge Frosting. Put one and one-half cupfuls of brown sugar, one tablespoonful of butter, one square' of scraped un sweetened chocolate, a few grains of salt and one-third of a cupful of milk in a saucepan; heat slowly and boil to the soft ball stage, or 240 de grees Fahrenheit.
