Rice could solve food problem
For thousands of years, rice has been
a staple in the Far East. With the
growing concern over world-wide fam
ine it has taken on a new importance.
Recognized as a valuable protein
source, rice, especially brown rice, has
been widely acclaimed as a partial
solution to the food shortage.
Moisture content in rice varies with
the age of the grain. The longer the rice
has been stored, the more liquid it will
absorb. The various grain hybrids
should be carefully selected according to
the recipe you choose. The short grain
types, which cook up tender and moist,
should be used for sauces. Long grain
types are most suitable for soups and
stuffings.

Keep in mind when cooking that
brown rice takes longer to cook than
white rice.
To keep rice white while cooking it in
hard water, add one teaspoon of lemon
juice or one tablespoon of vinegar.
One cup raw rice equals 3V? cups
when cooked, although preprocessed
rices have less volume. Browning before
cooking with moisture will also lessen
the volume.
Toothpicks this week will provide you
with a few simple recipes. Once you
learn the knack of cooking with rice, you
will be able to modify the recipes to your
own satisfaction.
BAKED RICE . .
V? chopped onion
Va c. butter
1 c. long grain brown rice
2 c. boiling chicken broth or boii",y t.aiird water
2 T. butter
Preheat oven to 375 degrees Saute the onion in
the butter until translucent. Add and stir till well
! coated the rice. Then add the liquid Ci)vi -:i(J

butter with the rice and serve imuirxliately.
CURRIED RICE
2 cups hot water
1 , cup rice
' , cup tnniatut'S
'U t. salt
1 i :. finely sliced onion
' i c. sliced green peppers
2 T. melted butter

Hour the hot water over the rice and place it
wneie it will remain hot but will not cook, for 45
minutes. Preheat the oven to 350 degrees. Add
Hie rest of the ingredients to the rice and pake
them in a baking dish for 1 Vz hours, stirring from
time to time until tne cooking is completed. At
first thre will be a great amount of liquid but the
rice will gradually absorb it. Remove the dish
from the oven while the rice is still moist. Beer
makes a good companion for this spicy dish.
CHINESE FRIED RICE
The rice for this. recipe should be cooked, fluffy
and at least one day old.
' 4 c. cooking oil
3 c. boiled rice
4 minced scall ons (optional)

' ; c. roast pork or ham or shrimp cooked and
diced
3 eqqs
1 T. soy sauce
Heat the oil in a heavy skillet and toss in the rice
until hot and golden. Then add the scallions and
the meat of your choice. When these ingredients
are well mixed, hollow a center in the rice and
break the er.qs into it. Scramble until semi
cooked Stir into the rice mixture. Sprinkle with
soy sauce.
SPANISH RICE
3 slices mincol bacon
' . c. rice
' : c thnny sliced onions
1 ' i cup canned tomatoes
I. salt
1 t . papr ika
1 seeded and minced green pepper
1 clove garlic, optional
Saute until the bacon is brown. Remove the
bacon and ad 1 the rice to the drippings the rice
and cook tint. I brown. Return the bacon to the
rice and add the rest 'of the ingredients. Steam
the rice in a double boiler for about one hour.
Add water or stock if the rite becomes to dry.
Since rice is basically a bland food,
spices and sauces may be added to make
