The longer the rice has been stored, the more liquid it will absorb. The various grain hybrids should be carefully selected according to the recipe you choose. The short grain types, which cook up tender and moist, should be used for sauces. To keep rice white while cooking it in hard water, add one teaspoon of lemon juice or one tablespoon of vinegar.
