there had been Members Have Been Organist in Eng lish Church for More Than a Century A remarkable record has been com memorated at Toignmouth England by the presentation to Miss Linter or ganist of the narish church of St Michaol East Teignmouth of an 11- J luminated address and a purse of 130 j sovereigns subscribed by parishioners and others The post of -mist in the church has remained uninterrupt 1 edlv in the Linter family since the year 1809 when Miss Linters father aroma in William Linter became organist of the church The pet dog show at the Royal Hor ticultural hall in London drew a great crowd chiefly of women and the old familiar scenes of luxury were wit nessed in every avenue of the nearly 1000 pens But all records in this direction were surpassed by the minia ture iron bedstead with mattress sheets blanket quilt hangings and all complete in which a Pekinese spaniel reposed The smallest dog in the show was Messrs Willsons miniature black-and-tan ter rier It weighed only two pounds two ounces and was brought to the exhi bition in a mans coat pocket The lightest dog however was a York shire terrier of one pound 14 ounces with a delightfully groomed coat of silken fleece Uses Animals Make of Their Tails Horses cows and other creatures use their tails as fly flappers says a writer in Dumb Animals Cats squir rels and many more twist them around their necks ot its tail Qreat New England Willow There is an enormous willow tree on the estate of the late Thomas Groom Humphrey street Dorchester Mass Probably it is the largest wil low in the commonwealth and per haps in all New England More thar breast high from the ground or to be exact five feet its girth is 28 feet 2 inches and its tallest twig is about 70 feet from the ground It is a great shadow maker on sun ny days having a branch spread of 110 feet and its limbs all of which have been broken by years and the storms of years are greater in diam eter than many old trees Nobody knows the age of this ancient willow Seventy five years ago when Mr Groom acquired the place this huge tree was one of the neighborhood at tractions and was mentioned as the big willow Owl That Kills Sparrows A trapper in the southern part of town reports that he caught a wood chuck in one of his traps last week and that when found the animals head had been eaten hy one of the large owls that are so plentiful hereabouts this season The next day the man In making his rounds saw the owl In a tree above the trap apparently waiting for the trap to provide him with another meal The woodchuck eatlng In a childish way for it is brief and comes not again POSITION LONG IN FAMILY How do you make good coffee I think many ot the Inquirers have been surprised that I have not given them a hard and fast rule at once but Instead I have said I will tell you how you cant have poor These are tin maxims i Buy good coffee Grind just belorn using Use a clean scalded coffee pot not tin Use freshly boiled water Do not allow the aroma to escape Do not extract the tannin The proportions are one rounding tablespoon of coffee to each cupful o water Pour two cupfuls ot either cold or boiling water on the coffee in coffee pot Let this boil two minutes add remainder of water remove to back of stove and steep not more than ten minutes Add tablespoon of cold wa ter and serve at once The question of using egg for set tling coffee is one over which there is much discussion Every one admits that using egg in coffee makes a clear sparkling beverage When egg is used the white should be mixed with the coffee in the coffee pot add cold ter boil two minutes and proceed as j in plain colfee j A little more coffee is required j when egg is used as the albumen coats over the particles of coffee and some of the strength as well as the flavor of the coffee is kept in When one enters a house where cof fee is being made he remarks How good the coffee smells We all like the aroma of good coffee but when this delightful odor is allowed to be expelled the coffee lacks just that much in flavor If the coffee pot spout has not a cover stuff It with paper to keep the Tannin is the principal in both tea and coffee which is harmful This is extracted by long boiling or by allowing it to stand too long on the grounds When the thrifty housekeeper wishes to save the leftover coffee it should be turned off the grounds into an earthen bowl and kept covered It is much better to learn about now much coffee will be required and to make just the amount than to have coffee left to warm over The old fashioned method was to set away the tea and coffee pot with out being emptied or washed Too often to be warmed over for the next meal adding more tea or coffee with additional water We cannot be too thankful that cooking schools and sci entific researchs have relegated such notions to the dark ages The harm fulness ot coffee depends largely upon the method of makin Chowder Cut in dice form The fact ot greatest importance in making coffee a wholesome beverage is to keep the tannin from being extracted Caroline Brown By ran L pound of salt pork Put in the bot tom of a two gallon granite kettle Cut up two pounds of fresh fish cod perch or pickerel cod preferred Place a layer over the pork then a laj er of sliced potatoes Eight medi um sized potatoes to two pounds of fish Slice four good sized onions and place a layer of them on the potatoes season with salt and pepper cover with hot water Cook one hour and then add one quart of milk and before serving add half a pound of Boston crackers that have been soaked two minutes in cold water Home Made Basket Line any good sized fruit basket such as peaches come in with un bleached cotton around the sides make loops about five or six inches deep and wide enough to hold the va rious sizes of medicine bottles Mark each of these pockets plainly with the name of the medicine it holds In the bottom of the basket may be put the rolls of bandages plaster absor bent cotton and scissors This basket which by the way is just the thing to take to the country will prove invalu able in case of emergency Baked Liver Buy calfs liver in a whole piece and wash and place in baking pan Make four slits across the top with a sharp knife and place a fat piece of bacon in each Sprinkle well with fine crack er crumbs salt and pepper to taste and add a little water Bake for two hours basting often and adding water as it boils away Marms Squash Pie One pint of squash sifted one half cup sugar 1 egg 1 cup milk one half teaspoon salt one half teaspoon mace CuJ lERI FOR WINTER Huckleberry Cake Always Welcome If Supply of the Fruit Has Been Canned Sift two heaping teaspoonfuls of baking powder and one of salt into a quart and a pint of flour Chop into this two tablespoonfuls of lard or oth er fat and two or butter Beat two eggs light add them to a pint of sweet milk Make a hole In the flour pour in the milk and eggs and mix with a wooden spoon Turn out upon a pas try board and roll into two sheets about a third of an inch in thickness Line a greased biscuit pan with one sheet cover it three quarters of an inch thick with huckleberries strew these with garnished sugar fit the upper sheet of dough on the pan and bake in a steady oven until done Cut into squares and send to table Split and eat with butter and sugar Use simmering burner for soups pot roasts etc boiling vegetables on top of the same vessel Apply the white of an egg with a camels hair brush to fly specks on gilt frames and they will disappear Steel knives that are not in general use can be kept from rusting if they are dipped in a strong solution of soda Keep a vegetable brush to remove the silk quickly from ears of corn A new nail brush with a handle is equal ly useful To bleach handkerchiefs after washing let them soak over night in water in which a bit of cream of tartar has been dissolved Butters are made slowly and jellies cooked as quickly as possible You will have better success making jellies on a bright day If dirt seems to settle under the fin gernails rub pulverized pumice stone under thew with an orange stick and wash with warm water Cut sheets of tinfoil and place un der the flower vase doilies and you will have no trouble with any damp ness affecting the best polished fur niture If the housewife who makes bread will beat it well with a large spoon before she puts her hands in it she will find that her bread will be light and wholesome Codfish Shaker Style Cover a pound of codfish with cold water and place it where it will be came lukewarm When fresh enough to the taste pick into shreds Place a tablesponful of butter in a pan and when melted stir into it one table sponful of flour add slowly one cup of milk stirring constantly season ith salt and pepper When it thick fns stir in the fish then pour into a tmttered baking dish and drop on top cne egg for each person Keep in the ovfn until the eggs are set when it is ready to serve Well browned toast ioes well with this dish Duster Hint Feather dusters as a rule are objec tionable anywhere about a house be Cciiso fo few people seem to know i ow and when they should be used For general dusting they are worse than useless like many serviceable articles they may be made nuisances to try out half a - misuse out every nouse necus one Pickled Red Cabbage Select firm but not very large heads trim off the coarse outer leaves quarter and remove the heart slice fine then pack in a lare stone jar or butter tub with salt between the layers do not use too much salt or it will injure the color leave over night then press and drain pack in jars and cover with hot spiend vine gar made by allowing one ounce each of black pepper and allspice to each quart of vinegar one half ounce each of ginger horseradish and salt two red peppers and a few grains of cayenne large feather duster witn a long han dle for cornices and pictures hanging too high to be reached with a cloth And this duster needs washing regu larly and drying in the open air if it i is to serve its purpose and become a dust disseminator Cauliflower a La Hudson One carefully boiled cauliflower one ounce of finely chopped cooked ham two cupfuls of tomato sauce two heap ing tablespoonfuls of grated cheese Drain the cauliflower carefully then with your hands and a clean cloth press it into a neat shape Put in a hot dish Have ready the tomato sauce stir into it the finely chopped ham then pour it over the cauliflower Arrange four heaps of grated cheese round and sprinkle the rest in two cross lines on the cauliflower Serve hot To Make Apple Toast Core peel and cut into slices six medium sized apples Put two table spoonfuls of butter into a saucepan and when it is melted throw in the i apples with half a cupful of sugar and I two tablespoonfuls of water stew the t apples quickly tossing them with a I spoon i In the meantime cut several slices I of bread and fry in melted butter un- til golden brown When crisp place i the toast on a hot dish sprinkle with J powdered sugar and cover with the apples Banana Mousse Rub four ounces of lump sugar on the rind of one lemon Pound four bananas and put with the mixture place in a saucepan and add the beat en yolks of five eggs stir over thf fire till it just thickens Whisk the whites to a stiff froth and when the banana mixture is cool fold them lightly in Pour it into a glass dish and serve cold Salmon Buy fresh whole salmon clean and bone tie up in cheese cloth and put in steamer Let steam for one hour sufficient to cook tenderly but not for meat to separate Let cool Make a mayonnaise dressing cover fish with it on platter lay sprigs of parsley and slices of lemon on for garnishment This dish though simple has been
