Is espe cially good for the little people nnd may bo varied by Various Icings or lin ings. Two Egg Sponge Cake. Separate the white and yolks of two eggs, beat the yolks until thick. Add to them hnlf n cup- iui ui sugar aim iwu lumusiiuuiuina i i lemon Juice. Take n tenspoonful of baking powder, a pinch of salt and one cupful of Hour sifted together. Beat the whites, add n half cupful of sugar to them, then put the two egg mixtures together and fold In the flour, very lightly, then add half n cupful of water and sprlnklo sugar over the top of the cake. Bake In an ungreascd tin thirty minutes. Sponge Drops. Bent live eggs very light, then add one cupful of sugnr nnd beat agnln. Add n tenspoonful of lemon extract nnd fold In one cupful of sifted flour. Drop In gem pans nnd bnke rnther quickly. Potato Cake. Take one cupful of shortening, two cupfuls of sugar, hnlf a cupful of milk, one cupful of mashed potato, one cupful of chopped nut meats, one-hnlf cupful of sweet chocolate, two nnd one-hnlf cupfuls of flour, four eggs, two tenspoonfuls of baking powder nnd orfe-hnlf tenspoon ful each of cinnamon, cloves and all spice. Best when a few weeks old. Chill Stew. Tnko one nnd one-hnlf pounds of stenk put through the meat grinder. Heat one nnd one-hnlf tnble spoonfuls of butter nnd the same of olive oil. Add six tnblcspoonfuls of chopped onion, four cloves of gnrllc; fry until n light brown. While frying add one nnd one-hnlf tnblcspoonfuls of Worcestershlr 3 sauce and three tenspoonfuls of chill powder, stirring well. Pour Into the pnn enough water to cover the bottom nnd then ndd the meat, almost covering with water. Cook for fifteen minutes slowly, then ndd three cupfuls of canned tomnto nnd two tenspoonfuls of salt. Blend one nnd one-hnlf tnblespoonfuls of flour with n little tomnto juice nnd ndd to tho stew. Freshen a half-cupful of smoked halibut by sonlclng In warm water. Mix four benten eggs with n half n cupful of milk, one-fourth tenspoonful of salt, n few dnshes of pepper. Melt ono and one-half tnblcspoonfuls of butter In nn omelet pnn, add the egg mixture nnd cook. When hnlf done ndd the hullbut. drained from the wa ter, nnd finish cooking. Turn on n plntter nnd gnrnlsh with toast points. Creole Chicken This mny be pre pared the day before nnd reheated. Cut up n well-cleaned fowl, cover with boiling wnter and cook llvo minutes, then simmer In n tireless cooker or on tho back of the range for hnlf an hour. Cook two cupfuls of canned tomatoes nnd hnlf n buy leaf 15 minutes, then strain. Chutney This Is n famous concoc tion well liked by our English cousins. This Is the senson to prepnre It for winter use. Chop and cook together two hours twelve apples, skins not removed, two green peppers, one onion, ono cupful of rnlslns, one cup ful of sugnr. one pint of vinegar, the Juice of n lemon, one-half tnblespoon ful of ginger nnd one-hnlf tablespoon fill of salt. Olive Oil Pickles Tnke one hun dred smnll cucumbers, three jrints of smnll onions, one pint of olive oil, one ounce of celery seed, one-fourtl pound of white 'mustard seed, ont ounce of white pepper. Slice the tin peeled cucumbers, cover with one nnd two-thirds cupfuls of snlt, let stand three hours.
