Meats such ns limn, tonKtie or chicken, ns well ns flsli loft over from n meal, Is potted for n luncheon dish, rutlicr than making It Into hash which Is too common In most of our fnmllles. The goodness of potted meats depends upon the pounding and seasoning. If carefully prepared and put awny they will keep for a long time and will be found most helpful In preparing emer gency dishes. Potted Chicken. Take cold roast chicken, rejecting the skin nntl sin ews, chop fine and to every pint allow n half cupful of chopped ham or tongue. Put the bones of the chicken Into a saucepan, add a pint of cold wa ter and simmer until there Is a half pint of stock; strain nnd remove the fat. Pound the chicken, ham or tongue tc a smooth paste. An old-fashioned mortar and pestle Is used for this, or It may be ground through the meat chopper untlj fine. Then pound, add a little of the broth to thicken; sea son with cayenne, nutmeg nnd a table-spoonful of butter. Put Into small jars and press down tightly, cover with n cloth, and cover the cloth with a paste made of flour and water, and lirtkc In a moderate oven one-lmlf hour, the jars standing In water. Take out, remove the cover and pour melted but ter over the meat. Tie with a paper moistened with white of egg nnd keep In a cool, dry place. This will keep for months, nnd makes an Ideal hot wenthcr dish. Fresh beefs tongue, rold roast veal, boiled or roast mut ton, bam and smoked tongue may all be potted In the same manner. Potted Fish. Pick cold, cooked tlsh to, pieces, senson with salt, pepper and n little mace, then put Into n Jar, tie tightly with a piece of muslin, cover with n flour paste, stand the Jar In wn ter and bake one hour In a moderate oven- When done and cold, pound the fish to n paste, pack In the jars and cover with melted' butter. nrood not on words or slights, tholr bit Intr force Is meiiHured by their housing mischief seeds. In the old world both the prince nnd peasant enjoy them summer nnd winter. Chilled with shaved Ice they may be at tractive, refresh ing, ns well as nourishing. With fruit soups, the nourishment depends upon the Ingredients used as with other soups. Such fruits as prjines, rnlslns, figs, bnnnnns, persimmons and pawpaws, have more food value than most other fruits, though lncklng In other Ingre dients. The nddltlon of stock or milk and egg also adds to the food value. Dried or canned fruit may he used n soup mnklng ns welj as fresh fruit. Apple and Rice Soup. Core and slice very thin eight unpeeled nppleft. Cook them with n half n cupful of rice In two quarts of belling wnter until ' hoth the fruit nnd rice are soft, then put through n sieve, add spice and hnlf n cupful of orange or grape fruit mar malade. Serve hot. Strawberry and Orange Soup. Sprinkle a pint of strawberries with sugar and let stand on Ice for one hour. Meantime make a sirup with one nnd n half quarts of wnter and n pound of sugar and n quart of fresh berries, wltli tho Juice of one lemon. Mnsh. strnln nnd add u cupful of or ange Juice with the prepared berries In sugnr. Serve Ice cold. Raspberry and Mulberry Soup. Wnsh nnd drain one quart each of raspberries and mulberries, mnsh them, ndd n pound of sugar and let stand for one hour. Then put through n sieve, "lent gradually, and when at the boiling jiolnt thicken with two tnbleiponnfuls of cornstarch rubbed smooth In a lit tle water. Serve hot or cold, adding the Juice of n lemon or a lime nnd hnlf a cupful of finely shredded al monds Just before serving. Prune and Peach Soup. Tnke one third of a pound of dried prunes nnd two-thirds of a pound of dried penches. soak over night. In the morning add a pint of cold wnter nnd let them cook to the boiling point, then ndd two tnblespoonfuls of sago; cook until the sago Is clear. Add a cupful of cherry, cranberry, or other tart Juice. Serve hot or cold. Cherry nnd Quince Soup, Stern and stone a pint of deep rod cherries; plnce them In a saucepan with the Juice and grnfed rind of n lemon, half n enpful nf quince Juice and a pint of Pm lyf wnter; cook until' the cherries nre ten der, then thicken with rornstnreh nnd cook until tho starch Is well cooked. HERE'S A RAISIN. Until the shortage of sugar, we never realized the wealth of sweetness stored In some of our dried fruits, and never consid ered them In re g a r d to t b e ir sugnr value. As .raisins nre three fourths sugar, why not take advan tage of that when using them In various dishes? The saving of sugar Is not so vital now, but we still need to use economy so that lorelgn nntlons may have a share. A handful of raisins added to al most any fruit salad adds to Its flavor and richness. For a toothache one of the pleasant remedies Is n split raisin, sprinkled with a few grains of cayenne; press the pieces together and plnce tho raisin on the gum nearest the tooth. A hot raisin Is snld to cure earache. Apples Stuffed With Raisins. Wash, core and remove the pulp from a dozen smooth. Arm apples. Put through the meat chopper two cupfuls of the apple removed, and two cupfuls of seeded rnlslns; add one tnblespoonful of lemon juice. Stuff tho apples with this mix ture nnd plftro them In a greased bak ing pan. Into a sauce pan put n cup ful each of wnter nnd corn sirup, add n tnblespoonful of butter nnd boll for five minutes. Pour this sauce over tho apples and bake until they are tender. Serve either hot or "old. Raisin Pancakes. 'Bent the yolks of three eggs, add two cupfuls of milk (sour), two tablespoonfuls of melted fat, three cupfuls of flour, a teaspoon ful.of snlt and one tenspoonful of soda. Bent well, then add one cupful of seed less rnlslns nnd fold In the stiffly heat er whites. Conk on a hot griddle nnd servewlth mnple sirup or honey. "A few chopped nnd steamed raisins added to ordlnnry boiled frosting makes n very good cake tilling. Nuts will make a still richer filling, If n few are added, finely chopped. The fruit may bo crushed, sweetened and mixed with or garnished with sweetened whipped crenm. With tho gelatin, however, that may he put Into the shell ns soon ns It Is stiff enough. Make the gel atin mixture nnd when It begins to set, bent It well with n Dover heater, then let chill nnd fold in the stiffly beaten whites or whipped cream or serve It piled high In the crust with a border of whipped cream and berries. Chop the to matoes nnd put Into a howl, add n tahlespoonful of lemon Juice, a ten spoonful of snlt, a tahlespoonful of chopped onion nnd the same of green pepper, with half a teaspoonful of pa prika. Mix and turn Into a dish In which It Is to he served. Add four tnblespoonfuls of coconut cream and servo nt once. Coconut Cream. To prepare eoco nut cream grate one good sized coco nut and pour n pint of boiling water over It. Wash and stir until all tho flnvor has bpen wnshed from tho fiber. Turn Into n cheesecloth nnd press firm ly Stnnd the milk thus obtnlned In a cool plnce over night, when a thick cream will have formed on the sur face. Remove this and set aside for various dishes.
