Kitchen Gardening.
If one realized tho health nnd
pleasure, not to say profit in dollars
nnd cents ono may get out of a few
yards of garden moro people would bo
busy this spring getting in their gar
den seeds.
The variety and abundance of good
things that may bb raised on n few
square foot of ground Is truly surpri
sing. Every Inch of Boll may bo used,
as tho fertilizers now on tho mnrket
can bo obtained suitable for any kind
of soil.
In n small garden one ennnot ralso
corn or potatoes enough to supply the
tablo Cor any longth of tlmo, but thero
arc so many small vegetables and
greens that aro only good when fresh
ly picked which may be easily grown
and fresh seed sown all summer.
Tho ground should not bo worked
while It Is very wot; it is best to wait
for it to dry out. When tho soil is
ready for tho seeds sow them and
press tho earth firmly down upon
them. If this is not done tho warm
days of sunshine will quickly dry out
tho soil, shrivel tho seeds and all of
tho vitality is lost Thesamo precau
tion should bo tnken when transplant
ing. After tho plants nro firmly set
and earth firmly pressed around them,
water freely.
Begin to weed beforo tho weeds ap
pear; that is, turn over and cultivate
tho soil around tho young plnnts; this
destroys tho first tender seeds and
tho weeding process is much light
ened. Tho coarser vegetables, except
a few beets, should bo excluded from
a amall garden becauso of lack of
space.
Early peas, lettuce, a small bed of
parsley, spinach, swiss chard, onions
and a dozen tomato plants, with two
or three cucumber vines will keep one
in fresh vegetables all summer. A
few beans take up but small space and
seed poas may be planted several
times In the same place, giving a suc
cession of this favorite vegetable. To
mato, cauliflower, celery and cabbage
plants may be bought ready for sot
ting out, which saves tho bother of
raising them from seed.
A few herbs, for seasoning, like
sage, thyme and marjoram, will stock
tho household for a' year.

Little Economies.
Darn hose at toe and heel before
they aro worn. This may be done on
the wrong side, using the long darn
ing stitch and the stockings will last
very much longer.
Use a spatula for scraping out
dishes, saving the cost of the knife in
materials in a few weeks.
Try using wooden spoons of small
size for stirring; they aro much easier
on the hands.
Prune Dessert.
Make a cake of ono cupful of sugar,
half a cupful of butter, two eggs, ono
half cupful of milk and two cupfuls of
flour sifted with two tenspoonfuls of
baking powder. Flavor with grated
lemon rind and bake In a largo sheet.
Cover with a layer of cooked prunes
well sweetened and flavored with a
teaspoonful of lemon juice. Serve
with whipped cream.
Sugar Pie.
One cupful of brown sugar, ono cup
ful of granulated sugar, one-half cup
ful of flour IV2 cupfuls of cold water,
ono teaspoonful of vanilla. Pour Into
the crust which has been previously
prepared. Cut Into small pieces ono
tablespoonful of butter and scatter
them evenly over tho top. Bake In a
moderate oven for 20 minutes.
Spiced Prunes.
Use the Juico from spiced peaches
or pears. Soak prunes until tho stones
may bo removed, then drop them into
tho hot Juice; simmer until tho prunes
aro tender. Remove the prunes and
boil tho juice until thick, then pour
over the prunes. Servo with moat.
Date Pie.
Bake a singlo crust, fill it with
stewed dates that have been chopped,
sweetened and mixed with one cupful
of sweetened flavored whipped cream.
Cover tho top with spoonfuls of
whipped cream and chopped nuU
mixed.
Eggnog.
Boat ono egg, add a tablespoonful
of vinegar, ono cupful of milk and a
grating of nutmeg. Heat the milk hot
and pour It over tho beaten egg. This
la a wholesome strengthening drink
and taken hot is good for sick or well.
Veal Oysters.
Cut a veal round steak into small
pieces the slzo of an oystor. Rub
over each piece a mlxturo of salt, pop
per and a llttlo powdered maco. Dip
In egg, then in cracker crumbs, and
fry.

Left Overs.
Uso cold cooked macaroni mixed
with minced boiled ham; wet vith a
thick whlto sauco, make Into cro
quottcs and fry ns usual. Servo with
tomato or whlto sauco seasoned with
cheese.
For a cauliflower salad, break Into
bits tho cooked cauliflower and ar
range on a dish, In tho center put a
cup of cold cooked peas, oprlnklo with
salt and paprika and chill woll. Servo
with French dressing or mayonnalso.
A nlco llttlo breakfast dish Is pro
pared with a half-Inch of hash, moist
ened well with gravy; put into in
dividual dishes and when very hot,
draw out of tho oven nnd drop In a
raw egg in each, return to tho oven
until they nro set.
A plneapplo pudding may bo pre
pared as follows: Butter a baking
dish and lino It with stale cake; add
ono cupful of pineapple and a cupful
of tbo juice; cover with n plate and
bako for an hour, uncover and put on
a meringue made of ono egg whlto,
nni'. two tablespoonfuls of sugar.
Brown In tho oven, and servo with
plneapplo sauco or cream.
Halibut with Milk.
Tako a thick slice of halibut, cover
with sweet milk and bako until tho
fish Is tender. Remove tho milk, sea
son and 'thicken for a whlto Bauco to
serve with the fish.
Salt mackerel Is very nlco served
this way after being freshened. Rich,
thick cream may be used instead of
milk, added just long enough to bo
come hot.
Cheese Pie.
Line a deep pie plato with a good
pastry and fill with a mixture of two
cupfuls of cottage cheeso rubbed soft
with rich cream, half a cup of sugar,
tho juice and rind of a lemon, half a
tablespoonful ot molted butter and
three eggs beaten light. Bako in a
slow oven.

White Loaf Cake.
Whites of eight eggs, 2V cupfuls ot
cake flour, three-quarters cupful but
ter, one-half cupful water, 1V4 cupfuls
of granulated sugar, two heaping tea-
spoonfuls of baking powder. Creum
butter and sugnr, pour water on top
of butter and sugar, pour slightly
whipped whites on top of water (don't
stir water in butter and sugar), then
add flour and baking powder sifted
three times. Add extract. Beat hard
until fine as velvet. When cake is
done It will feel firm under finger tip
touch.
Spanish Dish.
Put a layer of thinly sliced potatoes
in a buttered baklnc dish, add a layer
of thinly sliced meat of nny kind, then
a layer of sliced onion, (ono onion is
sufficient; ono cup of tomato, bake
in a moderate oven 45 minutes; just
ton minutes beforo serving, add half
a cupful of cooked peat.; these will
garnish the dish. Servo In the dish In
which they are baked.
Nut Bread.
Three cupfuls of sifted flour, four
teaspoonfuls of baking powdor, one
half cupful of sugar, 1 cupfuls of
milks, two eggs, woll beaten, ono cup
ful of nuts chopped, one teaspoonful
salt; put in two small bread pans, let
stand 20 minutes, and bake In slow
oven 45 minutes.
Rice Pudding.
To three quarts of fresh milk add
one-half cup of raw rice washed clean,
two cups of granulated sugar, and two
tablespoonfuls vanilla. Bako slowly
three hours, stirring first hour often,
then let crust form. Will bo like thick
cream when cold. Will serve eight
people.
, Rice Hash.
Take equal parts of roast beef,
chopped finely, nnd well-seasoned and
boiled rice. Mix thoroughly, put In
buttered baking dish, cover with to
mrto sauce, well flavored with onion
and bay leaf. Cover all with buttered
bread crumbs and bake about half an
hour.
He Didn't Understand.
