HOUSEHOLD HINTS By Mrs. Brevy Lilly Phone 2-4051 v"' t r*# :■*’ PMHMM HP'S 4 * . .. ...fxMMU&A Brown Sugar Apple Pie ’ 10 medium sized tart apples 2 tbs. salt pork cut in small pieces Vz cup brown sugar firmly packed Vi tbs. salt Pastry Peel, core, and slice apples. , Mix apples, salt pork, sugar, salt and spices. Place apples in a deep, 9-inch baking dish, cover with pastry in which vents have been cut. Bake in hot oven (450 degrees F) for 10 minutes Ifeduce heat to a moderate oven 1 (350 degrees F) and bake 30 H minutes longer. Serve warm l with a wedge of cheese. ****** Eggs a la Goldenrod 3 hard-boiled eggs 2 tbsp butter 2 tbsp flour 1 cup milk Vz tsp. salt Vs tsp. pepper 5 slices toast Parsley Mix flour and butter together until smooth, add milk slowly, stirring constantly, cook until smooth. Add salt and pepper. yolks from whites of eggs, unop whites fine and add them to sauce. Cut 5 slices of toast in halves lengthwise and O arrange on platter, pour the sauce over them, force the yolks thru a strainer and sprinkle over the top. Garnish with parsley. * * * * * * Cheese Souffle 2 tbsp butter 2 tbsp flour x/z cup scalded milk V2 tsp. salt xk cup grated cheese 3 egg yolks 3 egg whites cayenne Melt the butter, add the flour, and when well mixed, add the scalded milk gradually. Cook until it thickens and then remove from the fire. Add the salt, cay enne, cheese, and the well-beaten yolks. Cool the mixture and add the well-beaten whites by cutting and folding. Pour into a buttered baking dish and bake 20 minutes in a slow oven. Serve at once. Serves 6 to 8 persons. * * * * * * Brown Sugar Syrup for waffles and cakes 1 cup Brown sugar V4 cup water 1 tbsp butter xk tsp vanilla Boil sugar and water 5 minutes, then add the butter and vanilla, serve hot or cold.
