One is to provide an easily eaten bit of nourishment when more elaborate or lengthy service would e inconvenient. That is the infor mal sandwich. The other is to provide a dainty ind tempting morsel when anything mete sut)stantial would be too much. The Swiss cheese and mustard landwich is an instance of the first type. The pate de foi gras sandwich Is an instance of the second. So whether you want a substan tial meal that you can cat on the run or a dainty bite that you can toke without interference with your appetite an hour or so before dinner, von . have the sandwich to fall bark cm. That the sandwich has proved itself a very important part of mod ern life is shown by the fact tint there is an almost infinite variety of sandwiches now. There was a lime when lettuce sandwiches and jelly sandwiches and caviar sandwiches were the usual sorts served at tea ' time. Now we have dozens of "usual sorts." In fact, the idea seems to be to get something unusual, if this un usualness is only attained through the use of some different seasoning or spice. In a tearoom where sandwiches are one of the luncheon specialties the business women who frequent it are always interested in the new combinations presented as sandwich fillings. Usually the fillings are de licious, though once in a while the combination is rather forced, simply to gain a new effect. One filling they use is made of American cheese chopped fine and mixed with chili sauce a filling and delicious combination for a hearty luncheon sandwich, but of course quite out of the question for a tea time sandwich. Another filling is made of raisins and . nuts, mixed to a paste with cream. This, you see, would be quite delicious made into tiny sand wiches for the tea table, although in a big sandwich it is hearty enough to be satisfying for luncheon. Of course, everybody knows that the dainty making of sandwiches has more to do with their tempting aess than anything else. Good bread of the right texture and best butter, a sharp knife and a neat habit of piling the finished product on the plate make for really tempting sand wiches. Round sandwiches, made from white bread cut the size of little but ter plates, formed part of a bride shower "feed." These were filled with candied roseleaves and violets held together' with a blob of whipped cream, and each of the dainty morsels was charmingly tied with a narrow pink or violet ribbon. They were put in silver bread haskets, with -the. handle of one tied with violet rib bon and that of the other with pink. Miss Elizabeth Marbury, a mem ber of New York's social set, is a highly successful play broker. Stuffed Summer Squash Hi., This is one of the most satisfac tory ways of serving summer squash. The round white squash is consid ered the best of the summer varie ties. When young and tender they may be cooked without paring. Re move the stem and blossom end and put the squash in a coarse cheese cloth bag, parboil in . boiling salted water for 10 minutes. In the meantime make stuffing, using a half cupful of minced boiled tongue or of ham; peel and cut up two small onions into little diced shapes; put them into a sauce pan with enough cold water to cover them and a pinch of salt; as soon as the water boils strain the onions, rinse them in cold water and dry them in a cloth. Melt two table- spoonfuls of butter in a frying pan, add the onions and try them gently, taking care not to let them discolor; season with salt and a little paprika pepper. Mix in one cupful of freshly-made white bread crumbs and a half cupful of the minced boiled tongue or ham. Add a little cream. Mix well and use. Cut off the stem of the squash, take out the seeds and enough of the soft pulp to make a good-sized cav ity,, brush the inside with butter, salt and pepper, fill the cavity with the ready prepared stuffing; place in a baking pan, pour a cupful of stock around the squash and bake in a moderate oven till tender.
