League of Women Voters District Recipes Meeting At an executive board meeting of the local League of Women Vot er at the Fonjenclle hotel Thurs day morning plans were made for the Second district meeting of Douglas, Sarpy and Washington counties, Monday, May 23, to be held in Omaha at council chambers, citv hall. i The program of the district meet- j ing will open at 10:45 in the morn ( inu for an all-day session. Mrs. E. S. Rood is director of the district , and Mrs. Charles J. Hubbard is - head of the local league. Save Dollars Care used in saving and caring for all fat obtained from cooking meat in the home will save many a dollar which otherwise would have to be spent for butter, lard or other cook ing fats. Fats derived from the cooking of bacon, ham, chicken, beef and other meats should be Ijept, each in its own receptacle, to be used for different purposes. Household specialists in the United States Department of Agri culture say an old-fashioned method of clarifying fat from '.he soup ket tle or from cooked meats so that it may be used in the kitchen is to add the cold fat to a liberal quantity of cold water, then heat slowly and let cook for sn hour or more. When cold the cake of fat is removed and the lower portion, which will con tain the small particles of meat, should be scraped away and the white, clean fat saved. If the flavor or color, or both, are not satisfac tory the process may be repeated Several times. Another method often recommended is to cook a ! number of slices of raw potato in the boiling fat. When an ice chest is used fat in mall quantities may easily be kept sweet for cooking purposes. If. lard is rendered at . home in quantity sufficient 'for a long time it 6houid be kept covered in tins or earthen Mars in a cool, dry place, as in a cel- . lar or storeroom. ' Russian Fluff. Cooked rice,' any cold leftover meal. Put through chopped toma , toes. Salt and pepper. Put a laver of cooked rice in bak ing dish, next a layer of meat, then rice again, and repeat. Have top laver ni ree. Pour over all about one and one-half cupfuls of toma toes. Bake in oven about three quarters of an hour. If I have any gravy I add it to layer of meat. Stuffed Bacon Slices. Tims to prepare: Thirty minutes. Number servid: Five. Approilmate rest: Medium. la slices baron. ihi cupfuls bread crumb. Make a moist bread dressing. Place one heaping teaspoon on the narrow end of a slice of bacon; roll the bacon slice around the dressing and fasten with a toothpick or small skewer. Broil, turning frequently to brown on all sides, or fry in pan, turning to cook evenly on all sides and basting with the drippings. Bread Dressing (For Bacon Slices) -Mi cupiuis oreaa crumui 1 egg 3 tbsp. chopped green pepper runful churned celery Milk to moisten. Cut the vegetables very fine; mix thp rniinhs. cc-lerv. preen nenner and slightly beaten egg; add season ing and milk to moisten; let stand until the bread is soft; use for stuffing bacon slices. Chocolate Layer Cake. RECIPE. 4 c. cure lesf lard 2 c. light brown sugar 2 eggs (beaten until light) i c. sour milk 2 c. flour j t. soda It t. salt METHOD Work the pure leaf lard until creamy, using a wooden cake spoon, and add sugar gradually while beat ing constantly. Add the beaten eggs to sugar and lard. Mix and sift two cups of flour witli soda and salt; add this alter nately to the first mixture with the milk. Turn into three greased and floured round layer tins and bake in a moderate oven 25 minutes. Remove cakes from tins and spread lower and middle layer and the top with chocolate frosting. Stuffed Sole. A medium-sized fish, a quarter of a pint of picked shrimps, one table spoonful of fine white breadcrumbs, a little butter, pepper and salt. Remove the skin of the fish and make along slit down. the center. Gently insert a knife under this, and lift the flesh from the bone a little wav. Chop the shrimps and mix with the breadcrumbs and butter, which should be previously melted. Press the mixture lightly into the slit in the fish, and heap up. Should the sole ap pear to be a little dry, pour over it one tablespoonful of melted but ter or a little milk. If liked, a little shrimp sauce may be served with it, though this is not strictly neces sary. Glazed Sweet Potatoes. Boil large sweet potatoes of even si.re and remove skin. When cool, slice in thick slices and arrange in layers in buttered dish, sprinkling generously between layers with brown sugar, butter and seasoning with salt and pepper. Pour a lit tle water over all and bake in mod erate oven three-quarter, of an hour. Strips of bacon may be placed over top instead of butter. Cucumber Sauce. Prepare a Hollandaise sauce. Add a diced fresh cucumber just before serving. A very hot nail will not split plas ter when it is driven into it. The Kitchen Sink , It you are building a home or con template alterations consider these facts about a sink: If there is a shelf under the sink It should be from 4 to 6 inches nar rower than the sink, and at such a height that the floor under it can be easily cleaned. If possible there should be a wide shelf or drain board on each side of the sink on the level with the rim of the latter, one to receive soiled diahes and the other clean ones. Some housekeepers have these covered with zinc, but, as in all other places where it is used, the metal must be neatly fitted and closely fastened down so as not to leave any chance for loose, rough edges, or to pro vide breeding places for insects or a lodging place for grease and dirt. it there is no place for permanent shelves, sliding or hinged shelves may be used. A right-handed person usually holds the dish in the left hand while washing or wiping it, and the dish-cloth, dish mop, or towel in the right hand. It is con venient, therefore, to have the dishes move from right to left as they pass from dish pan to rinsing pan, and from rinsing pan to drainer and tray. This should be kept in mind and provision made for soiled dishes at the right and for a drain board at the left of the sink.
