i j 12 Canterbury to London Town It is food for thought to Ameri cans when one of our own girls attending school at Oxford, Eng land, writes back that "no one takes heavy programs of lectures for there is so much to learn through walks and a study of the history of the many places." It can readily be imagined, that an education so re ceived would be more real and sin cere than the one coming wholly from books. Such an education is an Omaha girl. Miss Esther Gunnison acquiring through her work at Oxford and her travels in England. She and a friend who was formerly dean of wemen at Colorado university re cently explored along Canterbury Road, and have written to relatives here of their experiences: Home of Dickens. .1 must tell you abojt our wonder ful Canterbury pilgrimage. I wrote you about the beginning of our jour ney and our visit to famous places along the way. How we loved the Dickensian places and the Kentish country he loved so well. It is said that when Dickens was a little lad he drove with his father one .day past Gads Hill (his poor father was in jail much of the time unable to pay his debts), and as they passed , the lovely old Gads Hill home the little lad said to his father, "I wish , this home were mine! It is so beau tiful." The father replied, "If you are a good boy you may. some day become the owner of this place. . Well, when Dickens grew to man hood he bought the place and wrote most of his books there. His char acters lived in the vicinity and Lonr don. I imagine hiin looking out of his study window over the lovely lawn and the gardens beyond to love ly English hills and meadows. , Or I fancy him walking down the village street to stop at the Falstaff inn in the village of Gads Hill to chat with people who later went into his novels. Or perhaps he drove along winding graveled roads, through the sweet woods south of Gads Hill, then m to the dearest village in the world, Cobham, where we spent a night taking supper and breakfast at Pick wkk inn. And now shall I tell you bout Cobham? ,? "Along Canterbury Road. All day we had followed the Ro man road of the Canterbury Pil gries, pausing only a short time for 4 Mie of lunch, which we ate sitting on mossy rocks shaded by great tree. Night was falling fast and we followed again our smooth, broad road until a sign at the crossroads directed us to Cobham. The sun was setting beyond distant hills, sometimes wooded and sometimes of ttuny shades of green of growing . grain. Indeed we were growing Hungry and weary when a turn in the road brought us to a little village nestled at the foot of a hill as if it had already "gone to sleep" for the flight . r "Pickwick Inn." A spry little sparrow-like woman of per haps 40 very graciously escorted us to the large low room where a table was already spread before the fire. After putting off our knapsacks and warming ourselves before the merry flames, v e were only too glad to eat cur supper cf "new laid eggs, tares thin slices of bread and butter, plum and orange marmalades, cara way seed caKe ana ica. navmg en joyed our evening meal like the rlarved pilgrims we were, we went lo a quaint old fashioned English house in the village to secure a room for the night. It is needless to say that' before an hour had passed we were asleep in a great four postered bed smelling sweet with its heavy fresh lirec. In ihe morning we returned to the Inn for breakfast and were greeted by an elderly gentleman with a round jovjal face, merry round eyes and a red nose. On his head he vote a smalt cap not unlike the fez of the Turks fend his suit was a heavy tweed unused to creases in .sleeves or trousers. In fact the latter .ere several inches too short and bagged fearfully at the knees. He greeted iii in a good natured cordial manner rubbing his hands briskly as he expostulated "Ah these are the ladies. Good morning, good morning! Now what can I do for you?" We returned the greeting and expressed our desire tor breaktast. "Ah to be sure," replied our host. "It shell be ready in a jiffy," upon which he turned in his brisk busy manner to the door. "Now what should vou like for breakfast? Some nice new laid eggs, bread and tutter and tea, and perhaps marmalade? We replied we should enjoy the menu given, U3 and our host de parted, soon to return with an arm ful of breakfast things which he placed on a small table in a corner. Seeing that we were cozily arranged he bade us linger as long as we liked and departed, to refresh him self no doubt, with "spirits" which were plentiful in his Inn. But bless me I must tell you Fish Dishes about sweet old Canterbury and its rnagnifiicent cathedral. - We took a country bus the last 20 miles of our journey and spent only a da in Canterbury. We visited the famous old church there, built 1,300 years ago, and then went to the cathedrail to spend several hours. Salmon in Ramekins Mix together one can of salmon, one tablespoontui dried bread splendor, its great lofty arches reaching half way to the sky. its many wonderful windows, its tombs, its long worn , stairways leading to the altar where pilgrims came from great distances to Worship at the shrine of a dead saint. Imagine sreat stone steos.' worn down by feet of pilgrims, and the stone floors before the altar also worn low byl the kneeling folk of many, many ag.'s. How Ave loved Canterbury. Of course, I bought a copy of Chaucer there and will read soon again- the talcs. Never before have I had a more wonderful week than that week of our pilgrimage from Lon don to Canterbury. Wears Oxford Gown. Yesterday I was matciculatcd. . I wore for thCirst time my cap and gown in Oxford and went through the formal ceremony which was in Latin. My work is wonderful literary courses under famous men and two courses in English history. Several of our classes are -held in beautiful, large halls, with wonder fully carved walls hung with famous portraits. Two of our classes are held in cozy, small lecture rooms, where we sit around a lovely fire with some dear old professor just talking to us as he would converse with a group of people. ' Tuna Fish Salad. Marinate the canned tuna fish in French dressing for one hour. Drain and serve on bed of crisp head lettuce with equal quantities of peas, shredd ed cabbage or chopped celery and mayonnaise dressing. Garnish with strips of pimento or a sprinkl'ng of paprika. ' Tuna Fish With Scrambled Egga. Beat 4 eggs slightly and add 1 teaspoonful salt, a little pepper, 1-2 cupful milk, 1 tablespoonful finely cut green pepper and 1 cupful finely shredded tuna fish. Cook in frying pan iu 2 tablespoonfus of butter. (one tablespdonful minced parsley and two egg yolks. Add salt and pepper to taste and enough milk or cream to moisten. Fill buttered ramekins and place them ih a pan of hot water in the oven. Bake for about one-half hour. Serve with tomato sauce. Fish Polenta. One-quarter cupful cornmeal, onc- Ithird cupful cold water, one-half tea spoon salt, two cupfuls boiling water, one-half cupful flaked fish previous ly" .steamed, one teaspoonful Worces tershire sauce, one-quarter teaspoon salt and one-eighth teaspoon pepper. Mixr together the cornmeal, salt ana cold .water. Add to the boiling water. Cook two hours, then stir in the flaked fish. Add the parsley, the Worcestershire sauce, salt and pep per; mix thoroughly, then pack into a greased baking powder can and cover and chill. When cold unmluld and cut into thin slices, flour and saute; or cut into slices and sprinkle each slice with grated cheese; plac. the slices in a pan and pour over them a tomato sauce; sprinkle grat ed cheese over the top and bake in the oven until the cheese melts. One cupful shredded fish, two heaping cupfuls diced potatoes, one half tablespoonful butter, one-third teaspoonful pepper, one-half tea spoonful salt. Boil fish and pota toes together in a small amount of water until done. , Drain through strainer, return to cooking kettle and mash thoroughly. Try out orie quater cupful of diced salt pork in a frying pan, remove scraps, leaving enough fat to moisten potatoes and fish. Put iu fish and potatoes, stir till heated, then cook over a slow fire till well browned underneath.
