Buffet Supper Always save the water in which j rice, potatoes or spaghetti have been cooked and use it to dilute canned ; condensed vegetable or tomato soup. The directions call for dilution with an equal amount of water, but at least half again as much of the thicK vegetable water can be used, making the resulting product more nutri tious, mortf palatable and capable of serving more persons. Baked rice croquettes are easier to prepare than the ordinary fried kind, are more healthful, and afford pleasing change in the menu. They are especially good made of scraps of ham or tongue, but beef, lamb or veal may also be used. To make, run the meat through a food chop per. Boil rice and add when about half cooked, salt, paprika, chopped parsley. Onion and chopped celery. Boil until all the liquid is absorbed. The rice should be fairly sticky in consistency so that the croquettes j will keep their shape. Add the ' chopped meat, shape like croquettes and bake in a brisk oven in a w"ell- trreased bakinsr pan. Put about .quarter teaspoonful of "bacon fat on ich croquette. They will not need to be turned or basted, and in about 20 minutes or a half hour will have a crisp, brown coating all over and be ready to serve, garnished with parslejr and small balls of current or cranberry jelly. Junior League Plans for Next Year The Junior league will support a baby welfare nurse for the Visiting Nurse association next year it was decided at the' monthly meeting ol the league Thursday at the Black stone. The work in the children's ward of the University hospital will be continued. Mrs. V. J. Hynes and Judge Charles Foster made talks before league members at the meeting.
