' The women or the west seem to be solving the lervant problem quite satisfactorily. I am speaking now of the average well-to-do housewife who always kept one maid and more often two. A party of us motoring in south ern California dropped in on one of the women noted in these parts for her hospitality. One of the ladies was from Buffalo and she chided me for coming in upon Mrs. Houston so near to supper time, exclaiming, , "Why, I know what it is to have people drop in upon nie without a moment's notice. What nervous ex citement you will cause this poor woman." But I knew the managing ability cf Mrs. Houston. After greeting ns. she said: "You're just in time to i ll .... .L. i. U:, T1,.r. ..till nil up mc vn.in. iijii3. i'vi6 . be 42 in all or supper tonight. Yes, 40, 41, 42." Mv friend from Buffalo paled, She knew there was no servant. You see we were in a couagc ai mc beach. Mrs. Houston chatted with us complacently as though she were 1 a guest without a responsibility in thp world. But already four of the guests were setting the table. How did they know how many to set up for? Just in this way. Mrs. Houston al ways invited you. to sign her guest book as soon as you came in. So that instead of someone awkwardly attempting to count heads in a frnu'ded room voil iust sort of counted yourself. ' The boys who caught the fresh n.-ackercl from the blue Pacific had cleaned it and were now on fur lough cleaning themselves. But the lady-folks four-of them were pan ning the fish. There was lots of laughter and jollification in that kit chen; as a silvery fish might per haps slide through some untrained finger. The hostess told me that she al ways had several casseroles of food ready. If no company came they simply were eaten the next day. One of her special dishes was "potatoes Anna." Enough raw potatoes to well fill a dish were thinly sliced. These were placed in alternate rows, with strips of canned pjmentoes and seasoning. Milk, sufficient to mois ten, was poured over the, top. Grated cheese was sprinkled generously af ter the dish had been baked, and then the dish was returned to the oven to melt the cheese and turn it in spots to an appetizing brown. , Another casserole and these were casseroles of generous size, as you can well imagine was cbmposed of corn cut from the cob combined with fresh tomatoes, green pepper, a suspicion of garlic and stale bread crumos ana tne wnoie(DaKea. , But the thing that made us re member our visit was Jhe orange pudding. Suppose I tell you how to make it for six.'' For the pudding we had could easily have served SO. Grate the rind of one orange and use the juice of one lemon and two oranges. Add-onerfourth cup sugar and half a cup of seeded raisins. Measure two cups of any plain cake crumbs, removing any offending icing that exists, and add this to the starch with half cup of cold water and add the slightly beaten yolks of two eggs. It took only 15 minutes to clean up every dish, pot and pan and put them away. But what about the tablecloths and the many napkins and the dish towels and the many towels used by both sun and sea bathers?
