The oyster i has about the same food value as milk. It is, however, many times the cost of milk, but because of its appetizing flavor it has decided advantages. Haw oys ters are anion)? the first, foods al lowed the invalid after the liquid diet. They are easy of digestion, and because of their peculiar flavor often excite the flagging appetite. If a .large number of oysters are to be served catch the liquor as you open the oysters, strain it through cheesecloth and place it in a pre serving jar in the refrigerator as the basis of a cream of oyster soup also called oyster bisque. This should be saved for another meal. To make this soup, let us suppose you have the liquor from two dozen oysters. It is a variable quantity, of course, but it usually serves six. In saucepan, rub to gether two lever-tablespoonfuls of flour with an equal quantity of but ter. Add half level teaspoonful of salt and a few grains of pepper. Then add one pint of water and the oyster liquor. Cook, stirring, until the soup boils. Remove at once and add another tablcspoonful of butter, a bit at a time, stirring until it is absorbed. Just before serving, sprinkle with tinely chopped parsley. Crackers or toasted bread points may be served with these. ' Every one wants to be able to make a tempting oyster stew. To do this properly two saucepans are required. . In the first, without burning, melt two level tablespoons of butter. Add two level table spoons of flour. Blend well and add a pint of rich milk. In the other saucepan put a dozen oysters and their liquor. Heat gradually to the boiling point and cook, until the beards just curl. Withdraw the pan from the stove.
