THE OMAHA SUNDAY BEE: OCTOBER 10. 1020. The Path to Health Sometimes, we who study foods become a bit too theatrical. And it takes one who has had to be stvrrely practical to make tis see tnat theory anil practise are closely allied. The other day I came upon a man who has been a commercial traveler far 25 years. That is a long time.. And if ever you have taken , a day's trip on a train you know j that general excitement and motion cf the train even for a short ride is likely to upset your digestion. Hut the man of whom I spaak liad been traveling for 25 years. And what he had to say regarding his food and general health habits seems well worth passing on. For he had a youthful spring in his step. His eyes were clear and keen. He just radiated health and I could readily see why the average tired business man would be glad to see liim come in. "When J first started out." he said, "I was no good to myself or any one else. I carried indigestion tablets and the moment I ate I grabbed for my tablets. Relief usually came, but I was suffering when I should have been at my best. I handled knotty problems for the firm, and one fine day I decided there was something wrong with my hafirfcif life. I decided to observe the diet and habits of the animals, for my firm handled live stock." Evidently his observations were well taken. He told me that, un romnntic and unsentimental as it might seeii, he lived strictly ac cording to a pencil and paper sched ule. Rctwecn 7t and 7:30 each morning he had' breakfast. First there was a glass of water upon arising. He believed in eating an orange. He ate a small dish of cereal intermixed with half a cupful of bran. Resides this there was toast and coffee. , He said he sat quietly after break fast for half an hour and went over the daily paper. Even if he were traveling he managed to get in at least half an hour's exercise after the paper had been discarded. It usually con sisted of a walk, if only between the coaches of the train. During the morning he had two fo three glasses of water not iced. Luncheon consisted of a cup of milk in som form, bread, a meat substi tute, and usually fruit for dessert. Sometimes the milk was in 'he form of a cream of vegetable soup. Some times it was in the form of cocoa or just plain milk. He did smrke after luncheon, and so fnr as I could dis- j cern seemed none the worse for it. Uf course, the afternoon was taken w;th business duties He was ready for dinner about 6. During the afternoon he got in several more glasses of water. With the day's work done, he was ready to eat a hearty meal. The principal meal of the dav, naturally, varied. He allowed himself meat once a day. Sometimes, however, if he haprened to be in some place where the fish was uarticularly fresh, he often selected fish in preference to meat. But the man was a hard worker, and he believed that meat "sticks to your ribs," as he put it. ! Sometimes there was s--up and sometimes the meal began with a salad. There was always one or two vegetables besides potatoes or rice. He said he was particularly fond of spinach and string beans and cabbage, and all those vege tables' which we commonly term green vegetables. - He had some dessert, a small serving Often he omitted dessert j id had cheese and crackers there Fashion Approves Batik'Negligees Make. Your Own Scarf It is quite possible to make many of the lovely scarfs yourself. To be gin with, there ahe serviceable scarfs of tricotine. This fabric comes wov en in tubular fashion, and one buys a yard and a half or two yards of it, according to the desired length of the scarf, turns under the ends, tucking fringe of a matching color in them and fastening them together, or else fastening the raw edges un der and then tying the ends of the scarf with hand-made fringe, made with heavy silk floss matching the 1 color of the scarf. Then there are scarfs of georg ette crepe, embroidered with beads j or spangles. You can stamp these j scarfs yourself with a suitable de sign, and then sow the beads or spangles in place without too much trouble, and, if you work carefully, with surely good results. The tied and dved scarf is another homemade possibility. To make this, perhaps the best material is a tan colored fabric, either crepe de chine or pongee. The idea is to dye the ends of the rcarf another color. The design remains the color of the foundation scarf tan, we'll say. To get the des;gn, one ties the scarf about with cotton cloths, and the part under the cotton cloths does not dye. Then one dips the whole end into the dye,' not leaving it very long, and, not, of course, boil ing it. You see. if you crumple the scarf together and tie two rags around the end, two inches apart, and then dip it, you will have two parallel stripes, with irregular edges. You can get a mort interesting cir cle effect by pulling up a bit of the scarf and tying a rag around'--it a couple of inches down. Of course you must tie all 'he places at once. Take three medium sized oranges, cut in halves and scoop out all the pulp, leaving the empty shells. Put these on ice to 'chill. Then make a cocktail sauce by mixing the following ingredients: One tcaspoonful of Worcester sauce, a few drops of tobasco sauce, four tablespoonfuls of chili sauce, a tea spoonful of horseradish and two tablespoonfuls of tomato catsup. Put two dozen small oysters in a bowl and mix with cocktail sauce, pivide this into six equal portions, place in the orange shells and put into cock tail glasses in a bed of shaved ice. The potato is said to have raised Germany from a third-rate power to a world menace because it furnished cheap food for its large population. 2. Milk sometimes disagrees with adults because it is taken as a mere beverage with a hearty meal, while it is quite a hearty food itself, and it is often taken too cold. 3. A waxed floor is better than a varnished or shelacked floor because worn spots may easily be touched up by the housewife, thus preserving the good appearance of the floor indefinitely. Small dessert plates may be used in place of cocktail glasses, and if the orairge shells are thoroughly chilled before serving the shaved ice may be omitted. A drop or two of onion adds nufcli to this cocktail, if iust enough is used to give that elusive flavor which leaves a doubt in one's mind as to whether it can really be onion. Food Hints Butter Sauce. One cupful sugar, one half cup ful butter, three cuptuls water, one teasnoonful cornstarch; boil one hour. Eggless Sauce. 'Melt one tablespoonful butter, add two teaspoonfuls flour and one and one-half cupfuls water; cook until smooth, then add one and one-half cupfuls brown sugar, two teaspoon fuls lemon juice and nutmeg to taste. ' Butter Balls. ' An easy way to make butter balls is to dip a rrench potato cutter in boiling water and cut from hard cake of butter the same as from a potato, The butter scraps may be remolded into a cake and more balls cut. If desired a few turns of the butter paddle will give the rough surface. Carrot and Bacon Hash. Chop coarsely enough cooked carrots to make a cupful and a half. Add . half the. quantity of diced cooked potatoes, two tiny young onions, finely minced; two slices of cooked bacon, minced, and two tablcspoonsful of chopped parsley. Season highly, with salt, celery salt and paprika, moisten with a littl cream, and turn into a frying pan containing two tablepsoonfuls of hot pork fat.
