But it can be done, and here are a few suggestions for the housewife who is working with this end in view. Stuffed Flank Steak. The Hlank must be cooked with care and skill. The flank is cut off by itself to be sold vhole. Make a pocket in the meat after wiping carefully, fill with a good poultry dressing if the meat Is thick, or fold together over stuffing if the piece is thin. Bake one hour in a covered pan. Remove to a hot platter and make a gravy from drippings. Coffee Jelly. AAA n.mi9rtpr cunful water to one and one-quarter tablespoonfuls granulate gelatine, then add one third cupful boiling water. When the gelatine is dissolved add one cupful light coffee crust sugar; strain through a cheesecloth and chill; serve with light cream and sugar. Prepare this on Saturday. Shepherd's Pie. . Grease a deep baking dish with some of the melted fat of drippings. Boil or steam four pounds potatos, mash and season them. Put them in an inch thick at the bottom and sides of the dish. Then put a layer of one-half pound of fried onions all over this potato layer. Mince the cold mutton and the jelly from it, if any, add half a pint S3 j "Nougat" Will Be Sunday's v Special Serve it as a dessert for your Sunday dinner. MADE CHO COLATES, 75c Quality, Saturday, lb. 59c 53 of canned tomatoes, with a little stock or plain gravy of any sort. Pile this in the center of the dish;' put the remainder of the potatoes thickly on top; rough the surface with a fork; bake until well browned in a moderate oven for about three quarters of an hour. Prune Tapioca Pudding. Two cupfuls 6tewed prunes, one cupful tapioca, boiling water, one cupful corn syrup, one-half tea spoonful salt Drain the prunes. Soak tapioca over night in cold water to cover. To the prune syrup add the corn syrup and enough boil ing water, to make three cupfuls. Heat to the boiling point. Add tapi oca drained from the cold . water and the salt. Cook in a double boiler until transparent. Line a mould with prunes, fill with tapioca mixture and bake 30 minutes in a moderate oven. Casserole of Beef Tongue. Wash a fresh beef tongue quickly cover with boiling salted .water, cook gently for about an hour and a half; remove all the skin and un sightly portions, place in a casserole with a cupful sliced carrots, to which is added minced onions, celery and parsley. Thicken stock enough to cover the vegetables with fat and flour; sea son well; place the dish in a-moderate oven. Remove the cover from the casserole after art hour's cook ing and allow some time longer for the meat to brown slightly. Pre pare Saturday; reheat on Sunday. Cabbage a la Cauliflower. Boil a firm white cabbage 15 min utes, changing the water, then more from the boiling tea-kettle; when tender, drain, set aside until per fectly cold; chop fine and add 2 beaten eggs, a tablespoonful of but ter, pepper, salt, 3 tablespoonfuls rich milk or cream; stir all well to gether, bake in buttered pudding dish until brown. Serve very hot Resembles cauliflower. The Sunday night supper when all the family have leisure to have a jolly time together should be plan ned with an especially enjoya'ble menu. If there are no guests a sim ple menu of favorite dishes, and perhaps a few sandwiches, which are sure to be popular with the kiddies and young people, will suffice. A bit of cold meat left over from the late substantial dinner may be the main dish. One hot and one cold dish are a good foundation for any supper, whether it is a Sunday night one, an after dinner snack or an in formal party planned over the chaf ing dish. Added to these should be some kind of a salad, crackers, some kind of bread, jelly, dessert or can ned fruit, cake and a beverage. Lit tle trifles like salted peanuts, olives and bonbons add much to the suc cess of such an affair, too. Among the hot dishes delicious for the informal supper are creamed tuna, shrimp wiggle, scalloped oys ters, salmon loaf, macaroni and cheese, cheese - and beans,' calves brains in individual casseroles, ham omelet, rice croquettes with tomato sauce, scallop of ham and creamed potatoes, baked stuffed eggs with filling of devilled ham or a hot sand wich made of either wieners split and9 toasted and placed between but tered buns with a. bit of mustard pickle, or a fried egg and a bit of bacon, which can be cooked, if liked, right at the table in an electric grill and served piping hot. For a beverage, hot coffee is pre ferred by many, but for young peo ple and children, cocoa is better. When served with a couple of marshmallows to a cup it it very tempting to drink. Spanish dishes are appetizing on a frosty night. Cheese stuffed pep pers, rice and tomato in the chafing dish cooked Spanish style, chili con carne, which is merely meat heated up with chili sauce, and tamales, which can be purchased "ready made" at first class grocers and deli catessens, are all satisfying. The table, whether for the fam ily or guests, should be made as attractive as possible for the Sun day night supper. If the meal is taken after a long ride, or outdoor MR. A hand some lace mat, an up to date oil cloth luncheon set, or an artistic arts and crafts crash runner dec orated in gay colors may cover most of the table for such an infor mal meal. For the centerpiece, nothing is prettier in the cold season than bright fruit such as oranges, rosy cheeked apples and bananas, real or artificial. A Jerusalem cherry in a red crepe pepper covered pot, holly of flaming poinsettias in a basket are most cheerful, too. Red candles in silver, glass or mahogany sticks add a charming glow to any supper table on a winter's night. Not much else is needed for decora tions, but if one happens to have a handful of autumn leaves from the milliner's these are scattered here and there off the polished table top. Paper napkins of holiday design are practical for these impromptu meals and economical and labor saving as well. A few suggestions for Sun day night supper menus are given below: 1. Cold loin of pork, potato salad, toasted cheese on toast, canned peaches, cocoanut cakes, cocoa. 2. Cold ham, potatoes escalloped with pimento, pineapple, banana and nut salad, graham bread, pea nut butter sandwiches, prune whip, chocolate cake, tea 3. Cold chicked, lettuoe sand wiches, fried bananas with lemon sauce, Washington cream pie, cocoa. 4. Salmon salad, creamed "pota toes, bread and butter, canned cher ries, sponge cake, coffee. 5. Cold roast beef, potato chips, olives, bell peppers stuffed with rice, rolls or tiny hot biscuit, orange gelatine, lady fingers, coffee. 6. ' Tomato bouillon, creamed eggs on toast, sardines, soda crack ers, canned pears, gingerbread, coffee. Potato Biscuit.
