Food Facts Rice forms the sole article of diet in India and Japan and China among the, millions of poor laborers, and on it they do hard physical labor, year after year. The Japanese sol diers were marvels of endurance! and hardihood in the war with Russia, yet their ' food consisted largely of the simple cereal. In the Philippines also, and in Hawaii, such nutritious products are the chief item on every menu. To be sure, such farinaceous food is, fattening ii eaten without a bal anced menu, and the human system needs other ingredients, such as acids, minearls, ash, protein; still, rice, especially the natural or brown kind, innocent of bleaching, is a most wholesome and cheap food. For, people who wish to economize ancf get a maximum value for a minimum cost, and for children, rice should be used for frequently than it is, in American homes. Fancy uncoated head is delicate, clean and delicious, and screening rice ana" fancy Jap and good grade It always should e cooked care fully, washed and drained, and the finished product should stand out, and each grain delicate and firm. Cream and sugar, or butter and salt furnish other necessary ele ments and make a nutritious meal, almost perfect in itself, dietetically. Another article of diet not used enough is red kidney beans. These are rich and full of nutriment, and cheap, especially if bought in bags. Baked or in soup, red kidneyscan not be excelled. Any quality brand insures that they have been handled by the most approved modern methods and machinery, cleaned, sorted and double hand picked. Other kinds not always familiar to the housewife are California ' small white beans, California large, pintos, cranberry beans, pinks, brown Swedes, Idaho small white Peas, too, may be utilized in soup and in many ways and are cheap when bought dried. Lima beans, too, may be thus purchased. How many of us realize that oats and all breakfast cereals are appro priate for other meals, and very cheap and health giving?
