I believe the two most welcome sounds in summer are the rush of waves against the shore, of lake or ocean, and the tinkle of ice against a glass containing a delicious cool drink. Unfortunately, we cannot all have the first welcome sound, but the second is much more universal. Ice tea and lemonade run a close race as favorites with us all; but the iced milk , drinks which can form part of a meal are less common. An egg nog is an excellent substitute for dessert, or even for the more substantial part of a lunch on a hot day. Iced chocolate is equally as delicious and nourishing as its hot sister; and soda fountains can testify to the hold that cold malted milks have on the American palate. It is a little difficult to rival the iced malted milks at home for the electric mix ers help in the making; but one can make a good substitute for the pro fessional variety. The fruit beverages are innumer able, for one can vary the kinds of fruit juices and the proportions of each, indefinitely. A fruit beverage cannot be considered a part of a meal as a milk beverage can. While coffee has no food value, iced cof fee as usually served with a large proportion of cream is a nutritious drink. Iced Chocolate. Prepare cocoa of all milk and cook 20 minutes in the double boiler. This long cooking makes the starch di gestible and keeps the grains of co coa from settling to the bottom of the glass when the beverage is served. Chill the cocoa and serve in tall glasses with straws. A spoon ful of whipped cream on top, or of ice cream, makes a fancier beverage though the plain cocoa is very good. If it is quite rich, it may be served over a small amount of cracked ice in the bottom of the glass. A good proportion for iced cocoa is two tea spoons each cocoa and sugar to one cup of milk, plus a few grains of salt and a little vanilla. Egg Cocoa. (Uncooked.) 1 egg white 2 t. ci.roa c. milk 2 t. snpar Few grains salt Few drops vanilla. Best egg white to a stiff froth with salt. Stir in sugar, vanilla and cocoa, then mix most of the froth with the milk. Pile rest of the froth on mixture after it is in serving glass. Serve very cold. Chocolate Malted Milk. 1 e. milk T. hot water 1 t. cocoa 1 T. mailed milk 1 t. augar Orating of nutmeg Pour the hot water over the co coa, sugar and mated milk, and stir till smooth. Mix with the cold milk thoroughly, then put into a mason jar and shake well. Serve very cold. This malted milk is improved by a spoonful of ice cream, added with the cold milk. Grate nutmeg over the top of the glass in which the drink is served. Fruit Juice Cocktail. K c. rhubarb syrup orl t. lemon Juice, other tart fruit 1 egg white, beaten sirup. till light. Shake the syrup water, lemon juice and egg white in a mason jar or regular shaker. Serve ice cold. May be used as a fruit cocktail at the beginning of a meal. ' Mint Cup. 1 pt. water. c. boiling water. 1 c. sugar. 6 sprigs of fresh H c. orange Juice. mint. Juke 4 lemons. Make a syrup of the pint of water and sugar by boiling IS minutes. Separate mint in pieces, add to the boiling Water, cover and let stand in a warm place five minutes, strain, and add to syrup; add to fruit juices and cool. Dilute -with water as de sired, and serve in glasses partially filled with cracked ice. Garnish with, fresh mint leaves.
