Cake Hints.
In changing a foundation cake re
ripe, or using a cake-chart, the fol
lowing points in cake making will
help you:
When nuts are used, add 1-4 teas
spoon salt for every cup of nuts.
Salt brings out the flavor of the
nuts.
When chocolate or the very best
:6coa is used, less shortening will
se needed than in a plain cake, be
rause the chocolate contains fat.
When fruit is used, dust it with
flour and prepare a stiff er batter
than for plain cake, otherwise the
fruit will sink to the bottom.
When the number of eggs is in
creased, decrease the baking pow
der. One beaten egg is equivalent
to onehalf teaspoon baking powder
in leavening power.
Egg and milk together should not
exceed Wi cups liquid with three
cups of flour.
Shortening will vary a trifle ac
cording to richness desired, and ac
cording to shortening . used and
whether nuts, cream, full evaporated
milk, or chocolate are used. Pure
lard, vegetable shortening, or salad
oil is the richest shortening. Oleo
margargine comes next, and butter.
A large amount of shortening
makes a cake close-grained; a small
amount makes it porous, but it dries
easily. Too much fat causes the
cake to crumble and it may be
heavy,
If melted fat is used in a cake, add
it cool. If added hot the cake will
he tough, coarse in grain, and not
so light as desired.
If fat is increased in cake a larger
proportion of flour and leavening
will be needed or less milk.
If water is substituted for milk,
use seven-eighths cup water where
I cup milk is called for.
If cream is substituted for milk,
lessen the shortening and use more
:ream than the milk that is called
or. ,
Fruit and chocolate, as well as
molasses and sour milk, contain
icid; for this reason soda is some
'.imes put into recipes containing
.hem.
An excess of soda combines with
fatty acids and a soapy taste re
sults, also brown spots often ap
pear on the biscuit or cake that con
tains more soda than necessary. Use
a half level teaspoon of soda to a
cup of sour milk and one-fourth tea
spoon of soda to a cup of molasses.
Question Box.
"Anxious Betty." The clams
found in Nebraska streams are not
identical with salt water clams; but
I am told that they are edible, and
may be prepared in the same fash
, ion as . other clams. They are
tougher than marine clams.
Steamed Clams, ,
Clams for steaming should be in
the shell and alive. Wash clams
thoroughly, scrubbing with a brush,
changing the water several times.
Put into a large kettle, allowing
one-half cup of hot water to four
iuarts clams; cover closely, and
steam till shells partially open, care
being taken that they are not over
done. Serve with melted butter.
Clam Chowder.

1 sliced onion.
4 c. scalded milk.
8 crackers.
Clean and pickover clams, using
one cup of cold water; drain, reserve
liquor, heat to boiling point, and
strain. Chop finely hard part of
clams; cut pork in small pieces and
try out; add onion, fry five minutes,
and add potatoes, hard part of clams
and boiling water to cover. Look
till potatoes are done, then add soft
part of clams, milk, butter and salt
and pepper. Cook a few minutes
then add crackers softened m cold
milk. Add strained and heated
clam water just before serving. The
water to cover potatoes should be
nearly absorbed before other in
gredients are added.
Frog Legs.
Frog legs are not only edible, but
considered a great delicacy. They
are usually fried.
. . Turtles.
The soft shelled turtle Is olive
above with small round black spots.
The limbs are olive brown spotted
with black. The under parts of the
shell are white. These soft-shelled
turtles are very much flattened. 1 he
young snappying turtle is also used
.for food.
Turtle Soup.
" The turtle should be hung up for
several hours to bleed thoroughly.
Skin the extremities by plunging in
to boiling water. Separate the shells
carefully, jn order that the gall bag
i is not broken. The soup is made
of the eggs, flesh and extremities
. much as other soup is made. (Long
cooking in water, with seasonings.)
A slice of ham adds good flavor, and
a' little rice is sometimes cooked in
the soup at the end.

Center Piece Place a basket of
spring flowers in the center of the
table. Mark each cover with a
single flower or bunch of flowers.
These may be pansies, spring flow
ers, or a different flower for each
t'uest. From this bouquet run a
streamer of ribbon to the central
basket. Tie the handle of the basket
with a large bow of ribbon or tulle.
Announcement Card The an
nouncement card will be attached
to the streamer and concealed in
the basket. At the suggestion of
the hostess each guest will take
up the flowers and thus draw the
card from the basket. On each card
have written the names of the en
gaged couple. These cards may be
plain or wedding bells.
Candles A very pretty effect may
be brought about by darkening the
room and arranging candles, with
shades to harmonize with other
decorations, on the table and other
p'aces in the room where they will
shed a mellow light throughout the
room. If candles are used let them
be the only lighting in the room.
Refreshments The prevailing
color may be carried " out in the
ice, cakes, and other refreshments
served.
Plain Shrimp Salad.
1 can shrimp. 2 lemons,
'i t. paprika, 1 ilozuu capers.
'zi t. salt, 1 slice ctton.
Soak the shrimp in ' ice water
fifteen minutes, drain, dry on towel,
lemove veins and break into pieces.
Squeeze the juice of one lemon over
the shrimp, add the seasoning and
toss about lightly to mix well. Mix
with mayonnaise dressing to which is
added onion (if liked), arrange in a
bowl lined with crisp lettuce, place a
large spoonful of mayonnaise on top
and garnish with capers. Serve with
slices of lemon.
Drip Coffee.
6 heaping t. finely (round coffee.
5 c. fresh boiling water.
Rinse drip pot with hot water.
Piace the finely ground or pulveriz
ed coffee in the drip bag, pour the
freshly boiled water on coffee in the
drip bag and after it has dripped
through remove bag from pot and
coffee is ready to serve. When mak
ing less than four cups pour coffee
through dripping bag second time.
French Coffee.
tV, c. ground coffee.
6 c. freshly boiled wster.
Put coffee in a flannel bag, tie top
,-ind put in an old fashioned coffee
pot; pour on the boiling water, boil
ten minutes; serve in another coffee
pot. One egg shell may be broken
and mixed with coffee before plac
ing in bag.
After Dinner Coffee.
S rounding T. ground coffee.
1 pt. water.
Use drip pot. Put the coffee in
the muslin bag and pour over this
water which has just reached the
boiling point. After the water fil
ters through into the lower recepta
cle draw it off and pour through. a
second time. Serve in after dinner
coffee cups without cream.
Cafe Au Lait.
y, e. pulverized I Pt. water,
coffee, IV, c, hot milk.
Put coffee into a filter, or drip,
cffee pot, add boiling water, and
filter three times. In pouring add
one and one-half cups of hot milk.
Serve very hot.

White Broadcloth
Suit

White broadcloth and serge are
extensively used for summer suits
which are adapted to sports wear
and, on account of their color, are
also suitable for occasions. In sum
mer the woman who is clad in a
smart white suit always looks well
dressed.
An effective use of braid trim
ming is displayed on this model, the
deep shawl collar of which is
trimmed with bands of white silk
braid, ending in loops. Braid is set
in bias lines under the arms, in a
panel-like arrangement that runs
from the sleeve to the end ot the
coat. The pockets are also braid
trimmed. A cord of heavy white
braid ties the fullness of the coat at
the waistline and ends yi two braid
ornaments.

have noticed In your descriptions of
weddings that a "Swan's Song" Is
very often used as a processional.
Can you tell me the name of the
composer or anything else about It,
or any other music that Is used other
than Lohengrin's or Mendelssohn's

A request for wedding music
comes from Nebraska City. John
Philip Sousa recently composed a
wedding march, as did also Victor
Herbert, and, I think, Reginald De
Koven. Besides these, there is a
wedding march by Alexander Guil
mant, for organ, and also a "Bene
diction Nuptiale," which was com
posed by him. "Cortege" by Debus
sy, and "Liebestraum" by Liszt, are
also appropriate. "In Paradisium"
and "Cantilena Nuptiale" by Du
bois, are also some well known organ
numbers, which are probably arrang
ed for piano. The "Swan Song" is
by Saint Saens, but a swan song
hardly seems appropriate to a wed
ding, as the song of the swan al
ways precedes its death. If you feel
that way about your wedding, how
ever well. I have no objection,

Whether or not you can get work
at 16 years depends on your ability
and the kind of work you wish to
undertake. You probably could not
teach school, but there is a great
variety of employment to which you
would be eligible and adaptable dur
ing vacation months even at your
age.
Almost any good college or uni
versity, such as the University of
Nebraska, for example, maintains an
art department, giving instruction In
that subject. The fees are merely
nominal. The advantage of this
form of Instruction is that while you
are specialising in one particular
branch, your general education is
not neglected. There are, of course,
art schools one in Des Moines,
Chicago Art Institute in Chicago,
Art Students' League in New York,
Academy of Fine Arts in Philadel
phia. Write to any of them for their
catalogues, which will state the fees.
The French phrase you wish trans

A Paradox.
Dear Miss Fairfax, Omaha Bee: I
am a reader of The Omaha Bee and
have always been interested In the
"Lovelorn" column.
Now I am going to ask you a few
questions, which I hope you will
answer if you are not too busy.
I am a girl, 16 years old, and have
never gone out with a boy yet. Do
you think I am too young to go out
with boys yet?
Several boys have asked me to go
out with them, but I have always re
fused, thinking I was too young.
About what is the normal size and
weight of a girl my age?
What colors would fit me? I
have a clear, light complexion, with
dark auburn hair and brown eyes.

Here is a paradox: A girl of 16
who thinks she is old enough to go
with boys Is not; but the girl that
age who thinks she is not old
enough to go with them realy Is.
The explanation for this is that 16
is young for a girl to be going with
boys and the girl, who realizes it,
has the good sense which makes as
sociation with boys beneficial rather
than harmful.
Size and weight are not de
termined by age, except in, infants
and very young children. Young peo
ple your age are patlcularly varia
ble, because some "get their growth"
earlier than others. '
Colors don't "fit." They some
times cause fits in the minds' of
sensitive people. Browns and tans
are pleasing as a rule, for auburn-
haired people. Dark blue, Shades of
green, and pastel shades are also
good, but reds, decided pinks and
purples should be avoided . by the
Titlan-halred. If a girl be the true
auburn type, with a very fair skin,
then white Is truly beautiful on her,
especially for evening wear.
