All of the counters are glass cov
ered so no dirt can gain entrance.
All of the meat cutting will be done
in the sub-basement of the establish
ment and then quickly carried by spe
cial conveyers to the counters and the
iceboxes, where each piece of meat
is immediately placed in contact with
the cooling system, so that it will
always be fresh and clean.
A vegetable stand is one of the
practical novelties of the market. It
is made entirely of white birch. Pipes
of the cooling system run up the cen
ter of it and from the top a spray
of water resembling a fountain falls
over the vegetables. The cooling
system and the water spray keep the
vegeables clean and fresh even in the
hottest weather.
Confident of Success.
Manager' Jake Rosoff takes great
pride in his new establishment. "Oma
ha leads the country in many things,"
said Mr. Rosoff, "and now it can
boast of the best market in the coun
try. This will be the most sanitary
market in the country. I know that
it will be a success, for I have the
confidence in Omaha to be certain
that Omaha will patronize a market
like this. There need be no fear that
the costliness of the fixtures and
equipment will force us to resort to
extravagant prices. Our combined
wholesale and retail business is so
extensive that we are able to pur
chase in much greater quantities than
other markets and thus we obtain
better prices. Also we can sell on a
narrower margin. We do not intend
to get back this investment the first
year, or even in the first few years.
So our prices will remain just as rea
sonable, and, I believe, more reason
able than most places because of the
fact that we are able to buy cheaper
and sell on a narrower margin owing
to our immense business."
Herman Rosenblura, for many years
with Gladstone Bros, and Courtney's,
will be the head of the grocery depart
ment and Tony Richly will be at the
head of the butchers and meat cutters.
C. M. Harding to Be Manager

be manager of the coffee department
of the new Public Market.
Quality coffees exclusively will be
handled. Special prepared blends
from Javas, Mochas and all the best
berries will make up the entire stock.
All of the coffees will be fresh roasted
each day.
The coffee department occupies one
corner of the basement and will be
one of the largest in the city.
