She feels she must not only satisfy the tastes of her family, but she must also give them the right kind of food which will make strong and healthy bodies. She knows that good cook ing is essential because the cooking process has a real effect upon the digestibility of the finished product. For instance, a thoroughly-cooked cereal is much more easily digested than one which has not received the long, slow cooking, because the well cooked starch gram has been changed and is more easily reached by the digestive juices. , Further than the knwledge of looking processes, however, the ousewife must know what toou does the body and which foods ac complish which purposes. Anything that we take into our systems which will build up our bodies, give us heat ulation. or more th.-n one of .these functions, is deserving of the name' of a food. : Strictly speaking, some definitions of a food only in clude the first two mentioned func tions. But if we leave the third out, we do not do full' justice to water, which is a most valuable food. By body regulation is meant supplying to the body those substances neces sary to keep the blood, the digestive juices, the gland secretions, etc., in good condition. Now the question comes, will food answer all three needs? The ideal food, of which milk is perhaps the only example, will. But even milk is not ideal as the sole food for grown people, because it is too dilute. Let us see hdw milk has earned the title, "ideal food." First we all know it contains fat. We see it when it rises to the top to form cream, we see it as butter when it is com pleted separated. Fat is a substance necessary to the human body. Then if milk sours sufficiently, it separates into a liquid and a semi-solid. The solid, which may be made inlo cot tage cheese, is largely body building material, technically called protein. Protein is necessary for life. If the liquid or whey is evaporated, there till be left some milk sugar, which is used medicinally and in modifying milk for infant feeding. All sugars and starches make up a third class of food substances called carbo hydrates. If the material left from the ' evaporation of milk is burned, there will still be left a tiny amount of substance which looks tike or dinary ashes. And it wil be ash, for J.
