It was with much satisfaction that N.
n. Updike, president of the Updike
Milling nnd Grain company, lead in The
Beo that at St. Ixjula the United btatea
court of appeala had reveraed tho deci
sion of the United States district court
In what has been known as the bleached
flour cases. This decision gave Mr. Up
dike the greatest satisfaction on account
of tho fact that the higher court has
taken the position for which he has al
wnya contended that the bleaching of
flour tnkes nothing from It, nor does it
adulterate It In any manner.
Owing to the fact that the government
may carry the cose to the United States
supreme court, Mr. Updike Is of the
opinion that Nebraska millers will not
resume the bleaching process, at least
until It is known Just what is to be done
in the matter of appealing,
Tho Mrachlng process, so far as It ap
pljea to flour la simple, consisting merely
of passing the flour through a box. tho
air inside of which has been heated to a
high degree, but not sufficient lo burn
or remove any of tho nutritious or
healthy properties. No substances or In
gredients of nny kind aro added and
nothing Is taken nwny. Coming out of
the hlearher the flour Is purity Itself,
according to the millers, and In this condi
tion goes Into the sacks without nny
additional handling. No change In any
of tho component parts of the flour has
been made aside from making the .pro
duct as white as snow.
Should the government drop the case
now, or should It carry It to tho United
States supreme court and then lose, ft
would be an easy matter for the mills of
the country to resume bleaching, for
anticipating a decision In line with the
one rendered In St. Ixmls they have left
their bleachers Intact In their mills and
all that would be necessary to start
them, in operation would be to slip the
belts over tho pulleys and turn on' tho
current.

The bleacher Is nothing but an air
tight box from whloh the' oxygen has
been burned out. Through this vacuum
the flour Is dropped from the bolting
machines and an It comes out It Is puru
white, no chemicals or other treatment
being applied,
Nebraska wheat still has the reputation
of making the beat flour In the world,
even when unbleached and with bleaching
re-established, Mr. Updike la of the
opinion that it will be considered Mill
butter, If such a thing Is possible of con
ception. In milling the hard wheat of the north
It has-been found necesaary to soften it
by mixing with durum wheat or rye, but
with the Nebraska wheat it Is quite dif
ferent. It Is recognized everywhere that
tho wheat ..of this state Is Juat hard
enough to make high grade flour without
adding any foreign grains or mixtures.
This fact has been established both In
tills country and abroad. Without bleach
ing the flour la a bit dark, but If bleached
It becomes snow white and Is much
sought after everywhere, being the favor
ite with both bread and pastry makers.

that cow for she was his only companion.
The cow considered the wolf good
company. She never objected to his
advnnces and often showed him favors.
