Steam Bakery The South Omana market la a comprehen alva name covering one of the great pri mary Industries of the west, the scope of which can be but dimly Rraaped In the enormity of the flguree uaed to tell It. A amoky city, composed of mammoth pllea if brick and cement, topped by lta foreet of ever belching atacke, enclosing the vast and Intricate Union Stock yards, gives vldence of the millions of live atock wnch move with nervous foreboding step through these doora. Mlllllons of live atock Is no exaggeration, for In one year, 1909, l,l24,6l cattle, 2.1M.493 hogs and 2,l05,S9 sheep were received at South Omaha. Th coat of thia 'tock on the hoof was approximately M)0,000. The value of the finished product a as not far from !l2l, 000,000. The slaughter of the animals la not by any means the only Important branch of he traffic. In fact the South Omaha mar ket la now and is destined to be by great odds, the flneat primary market for the feeding grades of stock In ' the world. Situated In the heart of the best grain belt and within easy reach of the enormoua hay region of central Nebraska this market has command of the western ranges and furnishes the most convenient outlet for all the autumnal shlpmenta. It la proposed to discuss In some detail the manifold Interdependent branches of the big western market. The visitors of Ak-Sar-Ben, who will throng through the metropolis by thousands In the course of the next few weeks, may. If they choose, find a fund of advance information which will clarify their vlalon when they pasa on their hurried visit through the big plants or traverse the great system of yards where a temporary habitat la given to the throng ing herds which must be sacrificed daily to human needs. Stock Comes Regularly. One feature of the South Omaha market la the regularity of the supply of animals, which in the course of a year pasa Into the packing plants. This regularity gives stability to the vast system of specialised Industry which must depend on this supply for each dally task. During the month of July. 74,421 head of cattle were received and this was the month of smallest re celpts. In the same time 166.160 hogs were received and 169,866 sheep. The large re. celpts of sheep balance the light receipts of hogs and the fair receipts of cattle. One of the heaviest months of the current year was January, when 82,944 cattle, 177,184 hogs and 122.774 aheep were received. It will be seen by a glance at the following able th:l ihe receipts distribute perfectly r.roughout the several months of the yee: ...id give the local market Its vigor and all 1 its well known dependable qualities. This .able mows the legularlty of the market, tt'.d ale a compar.aon of the year with .i at of 19 9. so far as the current year has HI'std. Note the fine Incrtaie of cattle ..ii sheep for the pr.se:it year. lneren.e Indicated. From present Indtcat.ona, receipts of cat tle will be Increastd thl yeqr by about W,CX), which will be ;he record year for the local market, an upyj jxlmatlon of l.lbS.liX). and mould t.iU iw.j up. the figuiei will be close to 2,0,0O0 bheep at the close of the year. A .rd about the machinery by which so vast and valuable product Is perfected brings one In discussion Immediately Into the heart of the packing center. Here grouped In positions of greatest convenience are four great packing plants, namely, that of Armour & Co., Cudahy Packing company. Swift St Co. and the Omaha Tacking company. The value ol those houses reach a total of aboul So. 000,000. The Cudahy Packing company t located west of the Union Stock yard. Armour St Co. and the Omaha Packing company have their location Immediately south and Swlfi Co. crciipy tht extreme southeastern section of the pack ing district. All the piants, Includlnc th the Union Stock yards, cover an area oi about 200 acres of gro'J.'d. The valuation of the Union 8.ock tiJa, all told, ap proximates t8.000.UH). To keep abreast of the rapidly Increasing tide of live stock, these packers and the Union Stock Yards company have been forced to add Improvements constantly. 1 Hiring the present sear the Cudahy Pack ing company has added a splenJIj depart ment for the slaughter of hogs. It Is un equalled In the Meet and has the appear ance of banquet hall, so far as neatness and correct appointments are concerned. I The same company has the excavation I completed for a fine five-story office building. Many 1 mprot enien ta. Swift St Co. Is just completing a new tank room and an addition to the bone looms. An enormous new steel stack is being erected to accommodate the entire boiler system. Tnereafter automatic feed ers are toe Installed In the batterlas of the boiler rooms. At the opening of the year the beef house went Into complete operation and now all cattle, hogs and sheep are slaughtered under one roof. This makes one of the lai(rt slaughtering houses In th world. Armour & Co. has finished lta sys tem of automatic feeders in Its batterlea of the butler room and ba worked a threat economy. The Omaha Packing company has completed Its sanitary paving system throughout the various floors of the depart ments. A new pumping system has been put In operation. Quite In line with the Improvements among the packers have been the improve ments of the year at the Union Stock yards. A vast area in the cattle yards has been fully repaved with a smooth cement floor. New fences and gates have been erected. The water taougha are also of con crete and completely sanitary. The pave ment of the principal thoroughfare through the yards and the pavement of Thirty third street is also one of the accomplish ments. The foundation Is Just completed for the new bank building which Is to ac commodate the great consolidated Institu tion of the South Omaha National and the Union Stock Yards National banks. A large Increase In the office room of the Exchange building Is being effected by rais ing the roof of the dining hall and adding a second story. By far the most attractive Improvement Is the arrangement with the Omaha Council Bluffs 8treet Railway company for a rapid street car service through the yards from the door of the Ex change building to the heart of Omaha. All railroad connections are thereby brought Into easy reach. Am Army at Work. This vast aggregation of buildings and supplementary construction enc'oses about 10,000 workmen, clerks and officials In their dally tas-ks. In the packing houses about 6,000 men are required. The Union Stock Yards company has a constant demand on the services of 2,000 men. The four great banking houses of the city which depend Immediately on the dally exchanges for a llvllhood add perhaps 200 clerks and other employee. The South Omaha Live Stock exchange has a membership of about 200 and the clerks In connection would be fully twice that many. A city of 80,000. which encloses this nucleus with a population representing thirty or more nationalities and half a hundred dialects and provinces of the whole civilised world, draws prac tically all Its llvllhood from the great In dustry. Bleak as the prairie after a scorch ing July wind would be tne city if by any chance the live stock Industry were re moved. One-third of the great city of Omaha would be crippled by the same blow. Why would it be soT Because the annual wages of so great a throng of men la above S5.000.00. The volume of business Is easily shown in the resources of the four banks which have In combined deposits In South Omaha over 110.000,000. cope of the Industry. In this connection the following summary will add a concise conception of the pack ing industry: Number of cattle slaughtered 660,000 Number of hogs slaughtered I.O47.O00 Number of sheep slaughtered 1,148.600 Number of calves slaughtered. 31. BOO Total value of live stock 171.000.000 Expended for labor..... S6,0u0.000 Laborers employed 8,000 Average wages per man SflOO Value of packing plants tfi.600.000 Value of output tin, 000,000 Good Railroad Facilities. Thirteen railroads of the west converge on this market and each brings In many thousand head of stock In the course of a year. The same roads haul away to the feeding districts and to other market centers about one-fourth of the cattle, hogs and sheep, and over three-fourths of the horses which are brought in. MEAT THOROUGHLY INSPECTED Gorernmeat Maintains Quite aa Arret- jj at Soath Omaha for the Proteo tloa of Coasamers, To Insure the publlo that It is receiving a pure product in foodstuffs, the United States government haa an efficient force of Inspectors In each department of the paok Ing industry. At prevent In the Bureau of Animal Industry at South Omaha there are 180 men from taggers to veterinary doctors, whose business it Is to examine every ani mal before and after its slaughter that no diseased carcass shall be sent out as food. This Inspection wag never more rigid than as present. The same inspectors require tbat all departments bw kept in a clean and sanitary condition. In the yards where the feeder stuff is kept for sale, Inspectors are located to de tect all forms of anjmal disease and to sea that all animals sent out as feeders ane properly dipped to kill scabbles and other diseases In this manner curable. OMAHA BIG IN HIDE TRAFFIC l.arsre Sapply Received Here and Graat Quantities Cared Into Leather Goods. When it comes to measuring up tht amount of hides handled in the course of a year Omaha holds Its hnad high among all tha markets, beoauss the report of Its receipts Is high. In fact -ntltllng It to standing among the leading markets of the world. At yet though the supply of hides Is large, Omaha has no large tannery, though rumors are that this lack win be supplied In tha not distant future. But tha hides when tanned come back to Omaha again as leather, to be worked up Into articles for which the country looks to t It to supply. Harness supplies are among the specialties of the Gate City. Some are manufactured here, some aro shipped in and a great many are shipped out to meet the demand of the surrounding country. DOUGLAS COUNTY WELL PAVED Many Good Roads Lead from Omaha la All Directions to the Country. Douglas county Is becoming splendidly equipped with roads leading into Omaha for well paved arteries for traffic lead In every direction from the city. The first start was made many years ago, when Dodge street was paved with macadam a distance of eight miles from the city limits, This pavement has now been extended nearly to Elkhorn, and besides this ma cadam roads have been built In every di rection. Four years ago ths state hsd a law enacted that gives the county quite a rev enue from inheritance taxes, and this Is used by Douglas county in road building. Subtil bs of Omaha are not not all all backward In the matter of paving. Dundee is to do a very large amount of paving and tha qusatlou of material to be used was reoeutly quite a bone of contention In tha little village. It was finally decided by a vote of the property owners to use as phalt. , Klorence has paved Its main thorough- ' fare with brick, and South Omaha does a large amount of paving each year. Wliy the Dos; Fled. He was only a bulldog, but when ha heard the word "police" lie knew it was time to run. And some dog owner prob ably of Canton, O. stands iinall chances of seeing him agulii soon, while several of the olficrrs at police headquarters are wondering at what they regard aa a demon, stration of canine Intelligence. Deck tiergoant Weuver of Indianapolis, answered the telephone and listened to the following report; 1 "This Is Miss Bowman talking, at 189 ' West Maryland street.
