Broiled Shad Roe with Bacon Wash thor oughly In cold water and steam In salted water for five miuutcs. Wipe perfectly dry; lay on a dish and season with salt, paprika and two tablespoonfuls of salad oil. Roll them gently ln this until well cov ered; then placo them In a broiler and broil for six or eight minutes on each side. Place them on a hot dish, and with a sharn. heated knife quickly gash the roc, half way through; garnish the dish with crisp, thin slice, of bacon, quarter, of lemon and a little parsley, cover wilh a little maltre d'hotel butter and serve. Panned Shad Roe After steeping the roe ln cold water drop it into boiling water and cook gently for twenty minutes; then drain and wipe dry. Lay strips of salt pork or bacon on an agate pk- plate and place the roes on these; dredge with salt and pspper and spread thickly with butter; over this dredge flour until covered. Place in the oven and bake for half an hour, basting frequently with a thin mixture of flour, butter, water, pepper and salt. Serve with a border of mashed potatoes and cu cumbers sliced and dressed. Sauted Roe-First parboil the roc's In salted water; then drain and wlpo dry; place them in a saute pan with some nice clarified dripping, or butter and saute until nicely browned on both sides.
