One of the results of the Centennial expo
sition at Philadelphia was the Introduction ot
'mproved met ho Is of brfnd-maklng , I. e. . what
Is called the "Vienna" method. This method
Ims resulted , during the pust eighteen > enrs ,
In nn Improved lirenJ , which Is now quite
largely used nnd sold , more especially In tlio
eastern cities. It Is now regularly hcrved at
hotels nnd restaurants of good stiuullng , and
cnn be purchased In brend shops that cater to
ihe better trade. Although so-cnlletl "Vienna
brend" Is sold In Omaha , I do not believe that
I do any Injustice when 1 state that I hnva
not been able to purchase n tlrst-clnss lonf of
bread In Omnlin , nor hnve I ever found any
crvcd nt the hotels or restaurants In this
city. Dread Is plentiful , but Is almost In
variably poor ; most of It unwholesome , soggy ,
or the revertc , too dry , dlincult of digestion ,
owing "either to the presence of too much
starch , or Its not being sufllolently leavened.
Hread Is the staff of life ; It Is the universal
food ; Is used at every inwl ; In fact , that It
Is Indispensable goes without baying. That
Omaha's bread can be Improved Is a fact
which cannot be controverted.
What woman , or women , will make her
01 their name "lilested" by taking hold of
this great subject ? The Marseilles of Mb-
erty was never SUIIK for a more ncble cause.
What greater , nobler object than that tlio
people I have pure , nutritious bread ? Hood
bread should be sweet and of wholesome
taste , not dry quickly , be full of gluten , not
starchy , not crumbly , nor soggy , nor over
white.
While the Vienna method may or may not
bo < tlio best , still ono thing : Is sure , there la
a vast opportunity for Improvement In the
bread product of Omaha. Why not organize
hici club In the Interests of good brend ? Se
cure from all quarters of the earth the best

recipe , nnd let every member of the club
present the results of her handiwork for
trial. Publish the recipes In the dally press ;
Inspect the bakcshops ; Insist upon good flour
and only wholsome materials being used , and
asceptlo : conditions being closely observed.
Such a club could work wonders. Us object
world command public approval , nnd there
would be to the members that satisfaction

which follows a work done for the public
good. '
Another field for woman's work Is the Im
provement ' nnd regulation ot Omaha't in I lie
supply , , notoriously bad , although perhaps not
worse than that of other American cities ,
yet seemingly almost ns bad ns It can well
be. Cow's milk , when freshly drawn , la
absolutely sterile ; even If subjected to no
contamination , It rnpldly decomposes , nnd la
foon the vehicle of countless millions of
dangerous microbes. The subject of pure
milk has caused more than usual Interest
during the past year by medical nnd food
Journals , the "Dietetic Onzetto" being promi
nent In this respect , from which I quote :
"The dangers that lurk In milk are no greater
now that they arc recognized and their re
sults measured than they were when their
existence was not even suspected. The re
sponsibility for their continued existence Is
In direct proportion to the knowledge we Imvo
concerning them.
"For Instance , there Is scarcely room to
doubt that milk which often contains ths
specific germs of typhoid fever , scarletlna ,
cholera or diphtheria , which has been con
taminated from the sources of the animal
furnishing the milk , nnd that such contami
nation could bo avoided by the cxerclso ot
ordinary care on the part of the owners.
Indeed , Infection could take place only
through criminal neglect or equally criminal
Ignorance. " Much has been done In New
York In the Improvement of the product
as In keeping poor milk out of the market.
While I resided In Essex county , New Jersey ,
there was to my knowledge only one dairy
that served pure and wholesome milk. After
I removed from the county there was a
virulent epidemic of typhoid fever , the sourca
of which was located In the contamination
of the milk supply. Quito a number of
deaths was the result thereof. Happily , rndl-
cnl legislation has removed this lamentable
condition within the past two or three years.
In order to secure pure milk the cows
should , In the first place , be healthy , well-
protected , cleanly nnd fed on bland food.
Any food that contains strong odors or nclds
will affect the milk , and under no circum
stances should fcrmentlvo food , such aa
brewers' grains , bo given , as neither boiling ,
nor alkalies , nor prcdlgcstlon will ovcrcomo
the toxic principle therein developed From I
personal experience I have no doubt that I
the feeding of brewers' grain to milch cows , ,
has been the cause of death to thousands of % j
Infants from cholera Infantum. The dairy
and all ntenscls should bo kept scrupulously
clean : nnd aeceptlc ; the delivery of milk
from open cans should be forbidden by law ,
which law should cause Inspection nnd regu
lation of milk nt places of 'production. In
the household milk should Invariably bo
kept In air-tight vessels , and never exposed
tifi the atmosphere even for an hour. If
fed to infants and children It should bo
sterilized , and possibly filtered , although
this will not entirely destroy the toxlo prin
ciple caused by the feeding of brew era'
grains or other causes. Pure milk from
healthy cows fed on bland food , properly
served nnd kept under nsccptlc conditions ,
and after being properly sterilized , Is next
tit mother's milk ( the Infant's birthright ) ,
the t ; best food for Infants , and It Is also Urn
Ideal i < food for children , and where It Is not
relished or dlsacrees In ninety-five cases
out of 100 It Is not the fault of good milk.
Up to a year of age no child should use
nny food hut milk , or tnke any drink but
pure water , except under the direction of an

per cent of the mortality from consumption.
Cholera Infantum Is recognized to bo a dis
ease of nutrition. While pure milk nlono
may not control this dreadful scourge * ot In
fantile life , still It will do much , and Is well
worth nn effort on the part of motherly
women. Where pure milk can be obtained
and fcprved to Infants under asceptlc condi
tions t , together with cleanliness , sanitary and
