( so called ) are wasteful and wanton drunk
ards , who nro constantly cursing both the
waiters and kitchen assistants lu their
broken Jargon.
Further Mr. Mathlew states that Rood
American cooks arc few and far between.
That Is also untrue , for statistics from the
different Journals provo that fully tiQ per
c.'nt of the hotel kitchens In the United
States arc In the hands of Kngllsh-spcaklng
chefs.
The traveling ami resident public In gen
eral speak the English tongue hnro , and
when sitting down to their meals with n bill
of faro before them , they do not want thi'ir
appetites Impaired by the useless "n la" and
"aux" that they cannot and do not want to
understand.
The French cookery that hotel cooks have
been expected to know , that we have been
giving higher pay for pretcmllnir to practice ,
originated aits the pastime of kings find
princes at a period before the ago of great
inventions , and when the rich idlers had
nothing b''tter to think about than to Imitate
the profligacy of the ancient Romans ami
vlo with each other In the cortUlness of their
banquets. It was a merit then in u conk to
make a dish expensive ami the extravagant
character of the wnole system thus stamped
upon it , is still an integral part ( if itatid unlit
for tin- adoption of an American business-like
people.
Surely there is something comical in the
fact that all the common cooks and all tlio
domestic cooks and housekeepers are setting
dishes "a la Allcmando. " "a la 1'rovciiculo. "
"a la Klamande" and ail the rest of it on
their tables every day , and have not tlio re
motest suspicion of the fact , wliilo the cooks
of the hotels who handle the big words with
out knowlngitheir meaning don't come within
n mile of what they think they are doing.
When a man orders beef on ono dish and
preens on the other nnd puts them together
ho knows lie is eating beef and greens and all
who sit at the same table can see it at a
irlhnco , but there is no possible way of mak
ing them see the sense of calling it "beef a
la Flamando , " especially ns they do not
know how the word Flamande should be pro
nounced.
A party of threes once stopped at n notel
where there was a French chef. One day
ot the dinner table one of the ladies ap
peared much amused at something , nnd half
usidc whispered to her neighbor :
"Why I its only hash. "
"Oh " said her friend "

order those tilings. They always turn out
that way. "

French cooks , French terms , FreiJch
entrees , etc. , may be all very well at a
French table set for Frenchmen , but the
American public regard these with sus
picion and take plain beef and turkov. A

the Dates of Indianapolis , and
other surpassing hotels in America ,
will show that hotel-keepers are doing away
with French cooks and their rediculousness ,
and arc slating what they hnvo for dinner in
plain language. When they cannot llnd
suitable English terms to toll YOU how a
thins is cooked , they lot it go without and
encourage theirpatrons to rely upon the repu
tation of their table as a guaranty that tlio
dish is good anyway. I would .say that if
you nro entertaining n company of French
men , use unhesitatingly French bills of faro
nil French. But practical Americans who
do not appreciate the merits of languages they
do not understand might perhaps think you
crazy to put ono of these effusions before
them. I will give you un example with its

paper to the following effect : "Tom meets

bill of faro is in Frunch. Tom ( haughtily )
Well , I understand French. Fred Well ,
you might , but the waiters don't , nor the
cooks cither. "
Regarding tnblo pieces nnd fancy dishes
thnt nro things of beauty , mentioned In vour
nrticlo , I would say that if n cook build'up n
line ornamental ecnterpicco of figures
molded in tallow or wax it Is pretty , but it
Is nothing , because other artists can do
better In plaster of paris or motnl. It does
not mnko the eatables better rather the
reverse. It docs not advance cookery. It
does not help small hotels nor private fami
lies. It is not practical art. Neither are
the French terms I hnvo spoken of.
Therefore I say , "Honor where honor Is
duo. " Give American cooks the chance of
peed positions in good hotels nnd it will not
bo long before wo have n rising generation of
practical American cooks , and then these
who learn their trndo In Franco , with their
"vcloutes. " "blonds , " "cspaguolcs , " "rom-
oulndcs , " etc. , with their garnis , will hnvo
to stay there and eat them and not como to
America with their broken Jargon.

A discovery has been made that may revo
lutionize the business of manufacturing incandescent -
candescent electric lamps. It came out in
connection with a suit brought by the Edison
company against the Heacon Vacuum Pump
and Klcctrlo company on an alleged Infrin"e-
incut of the Kdlson ' Incandescent light
patent. The suit came up in lioston a few
days ago on a motion b.v the Kdlson company
to enjoin the defendant from manufacturine
lamps , "
The electricians were surprised by the defendant -
fendant with the claim that the famous in
candescent light wns inado nnd turd by n
simple German watchmaker , Henry Uoebol ,
at his work In N'ow York years before the
war ,
Kdifton's patent Is on the filament of car
bonized bamboo inclosed In nn exhausted
glass tube. It Is known that ho made thou
sands of experiments and had experts searchIng -
Ing the world over for suitable material be
fore ho hit niton the Perfect conductor of the
carbonized bamboo filament.
I/ist December the United States circuit
court of appeals In Massachusetts gave a de
cision to the Kdlson company which was
generally accepted ns giving the Kdlson people
ple absolute control of the Incandescent lamp
patent. Tlio General Electric company then
began to close up all the lamp manufacturers
by obtaining Injunctions.
When action was brought against the Ilea-
con Vacuum Pump and Klectrlc company of
IJoston electrical people locked for the usual
thing. Hut when the case came up recently
the Hcaeoti people produced a lot of odd-
looking incandescent lamps and a mass of
aflldavits , and said they were prepared to
provo that Mr. Kdlson'sprinciple was discov
ered twenty years before he got out his
patent. Henry Cioebul , who lived In Monroe
street. Now York , and now lives at Tappc.i ,
N. Y. . made the lamps , and ho exhibited
them as a drawing card for his telescopic ex
hibitions.
Tlio facts as they nro set forth In the afll
davits are as follows :
Goebel Is 74 years old. Ho was a watch
maker add optician in a village tier Hanover ,
and also was a qualified apothecary. Ho
was much interested in physical research ,
and became acquainted with Prof. Monlg-
hauscn.
In liMliaccounts were published In Kuropcan
Journals of the Incandescent lamp Invented
by.I. W.Starr of Cincinnati. Ooebel nnd
Monlghausen were much Interested In the
matter , and made experiments with an In
candescent lamp. In IMS ( loobel came to
New York and opened a little shop near the
Grand street ferry. Ho continued his ex
periments , and one night ho astonished the
neighborhood by exhibiting from the roof of
his hotiso an electric are light run by a zinc-
curljon battery of his own manufacture.
The display caused an alarm of lire , the
engine came and ( Joebel was arrested , and
taken to court , charged with commit.tlng a
breach of the peace.
He turned again to experiments in Incan
descent lighting and accidentally discovered
that carbonized wood was a conductor.
After trying many materials ho found that
splinters from a pipe stem of bamboo gave
the best results , and in IMS ho made lamps
with this material for the conductor , and
with about thirty cells of battery they
emitted a brilliant light. Homo of thcso
lamps have been preserved.
In his nftldavit Goebel says that from as
early as 1H.V > to after 18S1 he frequently made
such lamps , and always had a number of
them In his possession ; often lighted his
shop with them , with the aid of n battery of
about thirty zinc-carbon cells. In 18.VJ and
1SIJO he was accustomed to exhibit In various
public places In Now York city a large tele
scope mounted on a truck , through which ho
permitted people to look for a small fee ; on
the truck ho had also a largo battery and
two or three incandescent lamps , which ho
was accustomed to light up to attract the
attention of the passers-by ; thcso lamps
were seen by a large number of persons , who
well remember them.
Goobel's two sons makeaflldavitas to their
recollection of the lamps.
Horace E. Van Hanst , a member of the
New York police force , on which ho has
served thirty-two years , makes aflidavit that
he knew Goebel from ISO.1) ) to 18T2. He re
members the electric lamps distinctly and
remembers their general construction.
Nicholas Finck of Elizabeth says ho saw
such lamns in Goobers store in IS. ) , and even
before. He frequently saw Goebel at work
on the lamps , and Goebel explained their
construction , telling him the necessity of the
vacuum , and showing him how he carbonized
slivers of a bamboo ilshing pole to make the
lilaments.
George G. Crosby , who was general man
ager of the American Electric Ivlght com
pany , makes allldavit that ho saw Goebel's
lamps , carbons and vacuum pumps in 1881.
His lamps were so far superior to those the
American company were making that it em
ployed Goebel at once.
Prof. Charles H. Cross of the Massachu
setts Institute of Technology makes aflidavit
that Goebel's old lamp is substantially the
lamp claimed to bo covered by Edison's
patent.
It is said that the existence of Goobel's
lam ] ) was discovered purely by accident by
a lawyer interested in electrical matters.
The attorney for the Edison company
asked for the immediate issuance of a re-
stralning order , but the court refused this
and took the matter under advisement.
