'J'bo condition of business In the country
Is most nails factory. Nebraska retail mer

All slifns nppoir to point toward a season
of un paralleled prosperity. Ono of the most
cncourn lnK indications Is the fcplliife' of con-
lldcnco ovprywhcro apparent In the country.

A Krcntdcul Is bcinp snld about the enor

The aggregate exports of wheat nnd Hour
were larger during iho crop > csir lbS'J-81 '
than In nny other crop year , exceeding 18'- )
000,000 bus'iols , but this is because the move
ment during the llrst ImlfoflbSl was un
usually largo , I'xccedinp lO.OOO.OOJ. bushels
In each month nnd exceeding 111,000,000
bushels in r ath of the last three months of
the half year , nnd amounting In the agirio-
Kato lo 7(5,325IbO ( bushels fop tno sbc months.
The exports in the last half of 187'J , as the
nbovo table shows , weio larger by more
than .1,000,000 bushels limn In * Iho last
half of I8SO ana have never been surpassed
until this year. But , taking the last six
inentlis of IhOl together , the aggregate
will unqtio tionnbly oxiood that of the last
half of 187'J by moro than 10,000,000
bushels , although -llie above tabio shows
smaller OXLCS ? . For only Iho preliminary !
statement of exports from principal polls are
Included in the llgurcs given for the month
of November , and the agcrogato from all
is ccitain to bo considerably larger ,
Koits . for the month of December Iho
figuics above given cover only the exports
from Atlantic poi ts , and for only four weeks ,
whereas tha shipments for the full month
from the Atlantic poits alone would bo
larger , nnd the exports In the mouth of
November fiom the Pacific ports amounted
to 4,700,000 bushels. The piobabloncpregato
for tlio six months will therefore be as much
' 125,000,000 bushels , against 115,000,000
'bushels during the lost , half of 187'J and 110- ,
000,000 during the last half of 1880.
It is not jet clear whether the vnluo nf
wheat nnd Hour exported this year wllleriual
the enormous aggregate in the year 1870-80 ,
which for all breadstuffs was about $ JS8-
000,000. The value of ul ) _ brcndstuffs ox-
poi ted during the first five months of the
current year was ? 125,000,000 ! , and xvjll prob
ably exceed SI 15,000,000 for the first half-
year , and thcro Is much probability that the
exports of corn during the last half of the
crop iour will bo quite largo. But the prices
of wheat and corn do not langa on the whole
as high as they did In 187U-SO , and it
Is tbcrofoie not Improbable that the aggre
gate vnluo ol breadstuffs expound this
year may fall somewhat short of the value in
that memorable year , uulnss the exports irom
this data to July 1 should surpass all prece
dent.
It may ho reckoned by no means improb
able that the future exports of wheat and
flour inav exceed oven the records of January-
Juno , 1881. If the commonly uccoptod
reports regarding the magnitude of doilclon-
cios in Europe aio oven appioxlmutcly
correct , the needs for the cunent year have
not yet bcon nearly supplied.

PALATABLE CORN.
.Scxrral Iluclpen Pioiu Ihn Uodklnt ; ArtlntH
of Hal } .
Most people in this country cherish
iho conceit tliut the use of Indian corn
for human food id substantially confined
to the United States , says the Now Yorlc
Sun ; jot , if they were t i 8co the iin-
incnao , the incomparable , Holds of
mai/o which occupy all the land in
southern Iliwgury , in Sorvia , in Uul-
tfiirhi and in Hoiiinania , they would con
fess tliat they had novcr bjhold such extensive -
tonsivo plantatioiiH of intii/.o in all
North America. Wo are also proud
of our ways of cooking this grain
and whoever has had the good foituno
to taste th.it admir.xblo sort of b-oad
which they ctll pone in southern M try-
land. Virginia and North ( J.uolina will
agrpo that the culin.try artists of these
re/jions / it now lionto rnaUo from corn
meal what the Lynchbury NCWJ justly
describes as "ono'of the most duliciou's
and substantial disljos in Iho world. "
Nevertheless , a dish equally delicious
and cn.ii.itly dolic.ito is made of corn
meal in Italy and is in universal use
thoio. Its common name is polentaand
if our friend.it Lynchburgshould chance
to partake of it at Milan or at Naplesho
would admit it deserves quite as much
praise as in his enthusiasm ho bestows
upon the Virginia pones.
For the information of our icadors wo
have obtained recipes for the linking of
polenta from two Italian culinary nrtlat .
and hoto is ono of them kindly furnished
by Signer Brignoliof the Fifth Avenue :
"The water must bo boiling , Put in
salt enough to flavor , and add Indian
moiil slowly , taking care that it con
tains no lumns. Lot the whole become
quite thick and stir it constantly to pre
vent burning. It mubt boil at least lif-
teen minutes. "
This is simple enough , but the pro
duct is pretty buic to be good ; and the
render will notice that it is not so very
different from a Yankee h.tbty pudding.
Signor Morolloof Twenty-ninth street
employs both wheaten Hour and corn
meal in making polenta ; and this is the
way :
"Tho nioul should bo of the yellow
Kind. Put the whcaton Hour into boil
ing water , sti ring it tho-oughly , and
then put in an equal quantitv of yellow
corn meal. Gaio must bo talcen to keep
lumps from forming. The polenta
ohould bo thick and fairly firm A sauce
frequently made for it is of finely chop
ped onions boiled in olive oil. Tomato
s.iuco may also bo used. In serving
game and especially birds , slices of
polenta soaked in gravy are sometimes
employed instead of to.ist us a garnish.
Polenta may also bo fried in slices , hko
ho.niny. "
Now we come to the roccips of the Re
del Cuochi , a Btanuaid Italian book ,
which reveals a thousand soi-rots of tlio
art of arts , that is to s iythe art of cook
ing."M
"M ike a fry of olive oil and onions ;
add to it torn ito juice or preserved toma-
tues. Salt as much water as you find
necessary , and when hot , pour it upon
the fry. Continue to boat it until it
boils , and then drop in corn meal.lotting
it f.Vll little by little while you stir it
with a ladle , so that it may not form
lumps. For a quart of water a quarter
of a pound of meal will sulllco. As soon
as the polenta is cooked , dish it up and
servo with grated cheese. "
As our loaders will observe , this is a
rather complex form of the dish in ques
tion , but hero is ono that is simplicity
itself.
"Polenta is also made by boiling yel
low corn meal with Billed water merely ,
that is to say , without the chopped
onions fried in oil ; but in that case it
must bo seasoned with butter andgr.itcd
cheese before taking it olT the lire. "
From the suno Instructive mutual wo
take another recipe which provides for
a kind of polontv that is moro highly
seasoned , and adapted , perhaps , for
moro distinguished occasions :
"Put two ounces of yellow meal to boil
in three quarts of milk with a little
pinch of salt.Vhon the polenta Is half
cooked , remove it from the llro , and add
six volks of egg.s well beaten , with a
pinch of powdoied ninnamon. Add besides -
sides an ounce of butter nnd halfan ounce
of powdered crackorn. Work the wllolo
into a paste and finish cooking in a but
tered stamp with llro above and below
As soon as the surface has taken on a
handsome golden color , soiwo it on the
table. "
Wo presume that with those various
rroipos.our hoiifaokooping and artistic
readers ivlll find themselves enabled to
furnish a now and most excellent pron-
ar.ition of corn meal. If they mtcccod
as uoll with It as the cooks wo have
sometimes chanced upon in Italy , they
will thank us for the information wo
have now supplied.

Insanity mill Gvnlun.
A good deal of comment hi8 ( boon excited -
cited by the publication in English of-
Professor Lombroso's work on "tnsnnh.
ity and Gonius. " It is a work in whioo
the author claims that genius Is tb '
ovklonco of n dogonor.itivo taint , und is

will not ho made to fool a HOII&O of ap"
prehension concerning their own mental
tal soundness by ljrof. Loinbroso'a
thesis. It is one that lias been worked
at bofoi-o by Moi eau do Tours and a good
many others , and neither the world In.
general nor the medical profession in
purticHilar has boon seriously impressed
by it. Mon of genius h.tvo not , as
a rule , been mad , except with an In-
R.inity of a scientific and scholastic
kind , hiich as the world really needs
moro of. The eccentricities , monoman
ias , and emotional exultations of genius
liuve been Incidental , and were not the
basis of their character and tempera
ment. Insanity is essentially a nonpro
ductive condition ; no insane man has
ever made a great discovery and origl-
ijated thoughts , or by his own laboroua
olTorts changed the tide of human
events. Insanity is a condition in
which the power of adjusting one's self
i. nd one's conduct to the environment is
lost. Surely there is no loss of this , and
shown in the work or conduct of men of
goniub. Contemporaneous science has
dealt bomowliat kindly with Lombroso
for the valuable work ho has done nnd
the new llulds of study ho has opened.
I3ut when he makes out Newton and
Luther insane , and Christ a par.inolao ,
one must think that tlio professor himself -
self has neither sanity or genius.
