THE OMAHA DAffi } ! JtJJCJiJ , 'WTCDJNJL'SDAT , JOTTE 24 , 1891. TO MAKE PORK SAFE TO EAT , IfForW of the Government In the Way of Annihilating Trichinosis. "INSIDE POINTS OH AMERICAN HOGS , VHIlolnl Investigation nt tlm Qtook- ynrd.H Conducted l > y MelonHHIH tor the Ueiioilt df tliu Government mid tlm People. American hogs nro not hold In the best ol favor In foreign countries. Two or three years ng6 some Germain oto heartily of the nnlmal , and when they ilt"d n day or two later the coroner said that tlio hog was un- Vroll when ho wai killedand that It was dan- porous for the ro > t of the peopto of the om- Jpiro to oat the Imported meat. Thus the relchstng , with old Windthont In his scat , urged war ngalnst the American hog and by pooch mid resolution finally succeeded In closing the ports of the otnplro to the food product. The hoisting of the bars before the great American nnlmal naturally caused great consternation In this country , and for months nrnl months the newspapers were filled with diutrlbos against the German par liament mid the kaiser for their hostile atti tude. Bat the United States Is going to defend Its hog. An act was passed at the lost scs- lon of Congrats providing for the examina tion of domestic pork and an appropriation of fJOO.OtX ) was made for the purpose. And then , too , just to make the thing thorough nnd leave no opening for attack , two eminent Cicrninn mtcroscopists wcro chosen by Secre tary of Agriculture Hush to assist In the ox- umlnntlnns. Those men arc Dr. E. lialzar end P. W. Bernard of Berlin. 'This Is the way the worlc Is done : Old liro'r hoe comes n-gruntlng and a-gquoalmg to his butcher. Ho wears a number , ana after death an export , with a big Itnlfo In hit right hand , cuts off n piece ol the diaphragm and a chunk of the rumn , or < lolu muscle , and places thorn In a tin box corresponding In number with the tag on the carcass. These pccimcns are then sent to tljo laboratory , Whore a portion of the meat Is macerated and clamped between the stout glasses of n tnlcros- cropo. The examiner squints Into the Instru ment for trichina gplralls , and , finding none , ( Ills out a blank report to that effect , which Is afterward approved and the carcass cut up for the people of the whole world. But If the examiner , bonding atten tively over his mircoscopo , bad found the presence of trichlnie or any trace of them In the moat the hog would havu been destroyed there and then. Theontozoon known as trichina spiralls Is the larva of what Is classed by boarded won who read books as a marmato do hel minth. The male is usually one-eighteenth Of an inch long. The female grows to the -r length of ono-olghtn of an Inch. Little Is known of tholr origin , but It Is probable that if the hog kept himself clean , or If the fellow who has him In charge pnld any attention to bis sanitary condition the beast would not bo I troubled with trichina spiralls. Filth and neglect give birth to this past Just as sewer gas starts diphtheria and makes men stop paying their rent. Rats have trichina. They fiavo lots of them and some of the sciontMlc men who were at the stock yards yesterday Bald that the infection of hogs cau bo traced to rats which they have devoured , i There Is a great deal about the explanation LCf these mlcroscopists as to the origination Kyii life of this entozoon which can scarcely Ro comprehended by a man unless ho knows rnll about hogs. Trichina ; are almost always found In the pupa state encysted in a calcare ous envelope nnd quite dormant. In this condition the cntozott are practically Innox ious to the hog and may remain so far any length of tlmo. But when the defected meat is union into ino numan stomacn tno gastric Juices dissolve the cystic envelope and the flesh In which they are em bedded and the parasites instantly begin a troublesome micratlon to the largo muscles Of tno victim. During their march they do Buch things as pierce the walls of the stomach and ullniontary tract , and claw at the mesen tery with its lymphatic network and the tissues of the abdominal cavity. If they travri upward they must pierce the muscular diaphragm and hero they have the offensive babit of taking up their abode , walking out now and then to take a bite at a man's heart or lung. If the ontozoa persists In going on a downward path they roost in the great sar torial muscles or other muscular masses of tbo lower abdominal region and of the lower limbs. From thn moment tbo outozoa enter the humon body they have but ono thing In mind , and that Is to got a good place nna there reconstruct their oysts. Thou they * begin to propagate with tearful rapidity. ! , cci The poor man , if ho boa man , suffers torrifllc Cain. Ho becomes fovorish. Inflammations the elementary tract and now and then' peritonitis sots in. Tills complication Is qutto Ilkoly to cause death. Thus it will bo scon that the parasite Is a bad thing to cnrry around in the human system. The department of agriculture has num bered the O. H. Hammond company packing house at South.
