IIo\v Horse KlCHli r Physically , horse beef may bo iilst'n. gulshcd from beef and mutton by its ap pearance , says the Nineteenth tJontury It is coarser in grain than beef. In this respect it rctcmblcs bull beef moro than any other. It is darker in color and looks moro moist than beef. It has a pe culiar smell and a peculiar sweetness of taste. Its flavor is generally considered to bo about half way botweeii the flavors of beef and game. It Is something like the flavor of hare. Ono reason why hoi-Bo flesh , as a rule , Is darker than beef Is that horses which are poleaxcd , or which have died from injury , disease ' or old ago , lire not properly 'bled and dressed by the slaughterer , "it is , however - over , by its fat Unit horbo flush is most ei'slly distinguished. The fat of horseflesh is not generally mixed with the lean. Jt is yellow In color. It looks more moist than tlio fat of beof. It soon molts and soon becomes rancid. Consequently imloss a rapid Bale is effected or the fat removed , an advanced price must bo charged in order to bceuro the butcher from unsold moat. Lastly , liorsollcsh can bo distinguished from beef by its chemical characteristics and it is In this way that It may bo recognized when mixed with other sub stances. Who can toll , except the chemist , what tire the component parts of a sausage , polony or saveloy y Or , who can toll by taste what those parts are ? Wo do not jmlgo by taste ; wo judge by llavor , and in the making of flavor to us o Sam \Voll or's phrase ' 'It's the beaconing as does it. " AticllonSaln of Hotel. A bold attempt was made the othei night to wreck an wuitbound Southern Pacific- passenger train near San Antonio nio , Tex. A tramp near Snofl'ord , 15C miles west of there , discovered a crowd of men encamped at a biding at ! 1 o'clock ono morning. Tlioirconduct was BO suspi cious that the tramp hurried to Spott'ord and told the feootion foreman what ho had seen. The train was duo in an hem and the foreman hurried out to the camp of the desperadoes who lied , says a dis patch to the St. Louis Republic. Inves tigation showed that tlio wreckers hail broken into a defeortcd section house near by , stolen therefrom hummers , crowbars , etc. , and with these removed one rail and otherwise sodihiibled the tlio track that had it not been repaired by the foreman and a force of men , the train would have been . derailed anil dashed down a ravine several feet. They call each otlior "master1 , " and discharge their other duties with statclincss and dig nity , says the Pall -Mall Ga/.otto. They have an opportunity now of adding to that dignity , and really being of some service to thsit division of the tem ple of which they- have the care. There has been n discussion in those columns about Goldsmith's grave , from which It results : (1) ( ) That the grave is in a negloceed state , and (2) ( ) that it is not quite Hiiro whether Gold smith lies within it or not. That the house iii which be died still stands , that the staircase of it was ascended by Burke and Johnson , and probably by Reynolds , that the rooms from which lie looked at tlio rooks building in the elm trees , and embodied his observations in a delightful essay , are still there all seems to admit of no doubt. That little corner of Urick Court is historic ground , and this historic ground belongs to the benchers. Of course , if it were anywhere else in some third-class Italian town , or some German dorf unknown and inaccessible , or some Swiss village among the moun tains there would bo a statue put up to the memory of perhaps the most popular writer in the world. Rut the bench is poor. The wealth of the Inns of Court is small. The incomes of the loading Q. C.'s are Insignificant. Tlio inn can build chambers like palaces , a library like tlio transept of a cathedral ; but snob a statue as Trinity college , Dublin , put up to Goldsmith , who lived for so bliort and inglorious a period of his life within it , must not bo expected from tliis "honorable , society. " Still a modest little plaque , about the size of a dinner plate , recording that the great poet , novelist , historian and essayist lived and died in that house might bo let into the front of oit. Tlio cost could not bo great , probably u sovereign. A subscription of 8d apleco among- the bench would raise it , and the benchers would have the satisfaction of knowing they wore of use. Adireful aceidont to six men on n hand car near East Helena a short time ago was only averted by the Intelligence of a dog , says the Helena Independent. A largo Newfoundland dog was in the habit of following the men on their daily trip down the road , and like all dogs it was ambitious to keep up with its masters. Ono evening when the men were return ing from their work the dog took the lead and there was a spirited race. The animal was only a short distance ahead , and instead of leaving1 the track and falling in tlio roar , kept going on at a great speed. The men never thought of danger till the car rounded a curve and came sud denly upon a long trestle with the dog no moro than twenty feet ahead. Ho did not realize the danger until ho como to the trestle. The men wore horror- stricken and expected to bo thrown from the track and perhaps killed. The in telligent dog know the danger instantly. It flattened itself between the ties and tlio cars passed safely over without ruf- lling a hair. It was the most remarka ble piece of intelligence over exhibited by a dumb animal. It could not go for ward ; to stand still was death to the degas as well as men , Jt was too late to jump , so the intelligent animal crouched , and saved its own life as well as the men on the car. The month ought to begin with mod erate summer temperature and minimum of storm disturbances in slirht , writes Iuv. { Ira H. Hieks in the Word and Works. The lid , and days next to it , will bring a marked rise intomporaturc , with very manifest tendencies to storms electrical and otherwise. From the ( ! th to the llth In a regular storm period in which , most likely , wo will encounter some of the warmest weather of the summer. On and about the 8th , 9th and 10th expect some vcay active developments. A brief respite from very high temperature is apt to pass eastward during the days immedi ately preceding the reactionary return to warmth and storms about the Mth and 15th. The planet \ronus is at her equinox , with the now moon combined on tlio 10th , Interested observers will bo curious to watch the results. The combination is well calculated to produce disturbances peculiar to itself , outsldo a regular pe riod though it is. Heat , thunder and hail are among the results to bo looked for. These tilings , with threatening storm clouds rising from the northwest , are sure to prevail in tlio regular period lth ! ) to 22d. The 20th is the day when the full strength of Venus will combine with "Vulcan ; " on that , and the two next following to the eastward , watch their "antics. " A marked fall from op pressively high temperature ought to follow from about the 21st in the west to 21th In the oast. I3y that time the reac lion will have started in the west , grow ing warmer in its eastward progress.eul- minuting In some storm llurrlos about the 2lith and L7th. The month will end hot , with a regular storm period central on the ill st. The public must not lose sight of tlio fact that as Jupiter departs from his perturbing place in the heavens , ho does not obliteratoor ohango the regular pur- iods of other planets ; neither must it bo concluded that such a mighty and slow- moving factor could wholly withdraw its intluonco within a month u tlmo. But wo hold that the change will begin to bo manifest in July the regular storm movements will go on , but there will bo more tendency to empty slormlnobs. Clouds will rise and threaten , but with a growing tendency to waste themselves in barren blustnr. This state of things will prevail and grow from this date for ward , Tlio regular maximum of summer - mor and winter temperatures will re turn , with their many results of good and evil mixed.
