As she stood behind n liner covered table Thursday afternoon with nr appropriate picture of the Lord's supper over her head , the women listening attentively re- nllzcd that the making of toothsome soups Isn gift equally with the painting of pictures or writing of songs , She began her lecture on soups by recalling to the minds of her hearers tlip bon mot of Bomo writer who declared that "Franco has two religions and two hundred sauces , while America has two hundred religions nnd two sauces , " adding that the same remark will hold good of nouns , as sauce-tiro concentrated soups and that the relation is so Intimate that they cannot bo divorced. After explaining that the brown particles extracted from meats by boiling , nnd not the juices , contained the nutriment , she rendered the making of beef tea as simple as the alpha bet. Hound steak was the chosen material , chopped instead of ground , ns there was no grinder. Ground beef , however , gives n richer flavor to the tea , according to Miss An drews. This was covered with cold water , nnd , adding : i scant supply of milt , she left It on the stove to simmer for 11 fteen or twenty minute. ' . Having done this she proceeded to unfold the mysteries of the malting soup stock in the two varieties' brown stoelr made from beef , nndwhlto stock inndo from chicken , veal or llsh. A 10-cent soup bono which was divided so that the water might como In con tact with the different portions of meat , was then carefully wiped with u napkin wet in cold water , although Mi s Andrews advised skinning the bono ns a method of cleaning it , ns in tills manner the skin , which is Imper vious to water and retards the process , is re moved. Keturnlng to her beef tea nnd finding It done she added a little salt and pepper nnd then sent it about by her ns- slstnnts for the women to tnsto , as each had brought a teaspoon nnd a napkin for the mir- pose of giving her opinion of tlio various mix tures. Miss Andrews made an extra qunn- tity of the nppetMng tea , declaring she had learned bv her experience in Kansas City to make n double ijuantity as there the women had brought tablespoons to taste withal. The assurance that a simple broth once n week was appcti/.ing , restful and afforded tlio va riety that is the outcome of the exercising of brain power in cooking , was : i great relief to many of tlio women present who have a wholesome dread of dally planning. Miss Andrews declared that there are thrco re quirements in clear soup , first , the beef stock ; second , tlio coloring from tlio browning of roasts or from n bit of stock simmered down ; third , the flavoring , deduced from any vcgct- nblo with a distinctive flavor and from the usunl spices united in modest combination with nothing conspicuous. Having left a quantity of the brown parti cles in the stock to exemplify the clarifying " process with the white of an egg broken "just enough to combine , and adding some little marrow balls , Miss Andrews proceeded to white stocks. These , she said , are inndo from chicken , fish or veal in combination with water or milk or from water or milk alone thickened n trillo with flour smothed with butter. After breaking off the heads from some asparagus stems to appear in a soup and cooking the remainder tor a flavor she used the white-stock in combination , with the result of a very delicious soup. This was passed about affording n pleasant avnnt gent for the dinner which would follow shortly on the arrival homo as the hours had been pro longed. In the snmo fashion of white stock Miss Andrews told of the making of any amount of appetizing first-courses of cauli flower , salsify , potato , corn and other vegeta bles , closing the lecture with a pretty au rc- voir to her interested audience. Ruysschacrt , who has the contract for grading Spencer and Emmctt streets from Sherman nvcnuo to Twenty-fourth street was delinquent. Iio has done nothing under his contract this spring and the board decided to give him flvo days to como to time. If ho docs not proceed with the work nnd finish the snmo in ns short n time ns practicable the board will take the matter out of his hands , llnnish the job and charge to his account. Mr. Fumy moved thnt the chairman bo ordered to cash the check of Ernest Stuht in the sum of $ T > 00 nnd deposit snmo with the city treasurer. Mr. Stuht forfeited this good faith money by reason of his failure to furnish bonda nnd enter into a contract for lilllng cer tain lots declared by the city council a nuisance. Major Furay proposed u vote of thanks to Major Balcombo , who has saved his salary to thu city by means of forfeitures , and Stuht's $500 cheek starts in on Mr. Kiorsted's salary. At this rate it is presumed that It will co-it the city nothing for the services of its board of public works. The petition of the Missouri Pacific for nn iron bridge over Sixteenth street and the Belt line was approved. It is proposed to erect n substantial and handsome bridge with a double track. The estimate of John F. Dailoy for Bowcr- ngo on Francis and Heed streets , amounting to $ S70.81 , was approved. The Only Ono. The Chicago , MilwaukeeSt. . Paul railway is the only line running solid vobtibuled , electric lighted and steam heated trains between Chicago , Council Bluffs and Omaha. They feel that viaduct assess ments have not only been plied onto them In the past , but there is a very bright prospect of It continuing Indefinitely.
