The following amusing storj't which was
told by Franklin , ought to bo read and
acted upon by all corre pondent.s commu
nicating their thoughts to the newspaper
press : A young man , on commencing busi
ness , proposed to paint oer his shop win
dow , "John Thompson , hatter , makes and
sells hats fw ready money , " to which was
added the sign of a hat. Ono friend sug
gested that , as he made and sold huts , the
word "hatter' was nnncctsastry. It was
therefore struck out and the nlgn re
mained , "John Thompson , makes and sells
hats for ready money. " Another friend ad
vised him to omit the phrase "for reiiN
money , " as there would occur occasions for
selling on credit ; and so the sign read :
"John. Thompson makes and sells hats. "
It was then hinted that the buyer of the
hat did not care who made it , and that the
sign would be better if it read : "John
Thompson sells hats. " But another ampu
tation was in store ntlll , for n critic point
ed out the nselessness of tlve phrase "sclla
hats , " for. said he , " 110 one would ever sup
pose thnt the hats were to bo given away
for nothing. " Thus at last this aspiring
tradesman commenced business , like many
worthy successors , under the modest sigu
of "John Thompson. "

Hop Ycaiit and Bread-Making.
The recipes quo ted below are taken from
the "Appledoro Cook Book" edited by Mis ?
Maria Parloa , of Boston , and are endorsed j
by good cooks :
Hop Yeast , Pare and boil ono dozen
mealy potatoes ( they will boil in thirty
minutes ; ) as soon as you put the potatoes
on to boil , put a handful of hops into an
other kettle with three quarts of cold water
1 cover and trail. When thu potatoes arc
boiled , drain and mash flin * ; then strain
the hop-water through n iluu Helve , on the
potatoes ( be sure that thu hops are boilinc
when they are strained on thu potatoes ,
and stir well : then add one-half cup of r
migar , one-fourth of salt , and ono pint of r
flour ; mix this well and strain through r
cullender , let it stand until it is milk
warm , then stir in one cup of good yeast i
and set it to rise where it will bu warm , li
will rise in llvo hours if the yeast is good

publishing it every season , and it claims
t , that no person has ever tried it for curing
beef , pork , mutton , tongue , or hams and
' ever afterward cured meat in any other
manner with satisfaction to himself. The
