The following method of making
butter was puisncd by the Farmmgtoi
creamery company , Farmington , Con
necticut , in the production of n prom
iuiii lot : The milk wns cooled ant
aerated before it came to the cream
ery , was received once a day , was
mixed at once in a recohing vat ,
thence drawn into deep , open coolers ,
3 by 20 inches , and sot floating in a
pool of cold spring water , It waa
skimmed in twenty-four hours , the
cream again mixed in a vat
vud allowed to tand twenty-four
lours and become slightly
acid. It was then churned in a barrel
lash churn , and dashers i mining
about forty-eight strokes to the inin-
ite , and the butter coming in about
'orty-fivo minutes. The butter wai
worked by a lcor worker and salted
one ounce tothopound. After standing
twenty-four horns it n.is again worked
over and packed in tubs. Jf our Imt-
