Tlmt would maku the beer sour. " "Wlvitis " yeast ? "Well , hero's our chemist. Ho will toll you that yeast is probably the lowest form of organized lifo. It is n plant or spore , invisible but tloating in the atmosphere. Ilero ia photo graph of some yeast mngnilied u thousand times. Yon see that it is iipparcntly little clusters of eirgs , hko the roe of a shad. Now look at it through n microscope , nnd each ono of those little eggs becomes half ns big ns n pen. There is n cavity nt the middle , ns if there was a stomach there. Drawers use yeast iiit prefer ence to several ferments they might use. The refuse yenst is given awnj1. Other brewers often coino to borrow yeast , wishing to change their yoasi , as they say. It is hko breeding with certain animals which finally lose their mottle , nnd you introduce now blood from your neighbor's stock. So it is with yeast. A's it is organized lifo , you want to quicken it from another brewery. Wo use about ono irallon of yeast to a barrel of beer. When it has fermented the beer to the best of its ability , the yeast set tles down upon shavings of clean beech put i.i the bottom of the big tons. There it porches like chickens going to roost , nnd there is n man hole ill each ono of those tuns or carks big enough to let a man put his head nnd shoulders insido. Ho re moves the yeast nnd shavings , ' and thoroughly clonscs the cask , and then the next boor is let into it by a hose. " The brewer then took mo into n place under the ground and protected by air-tight doors , whore they were filling beer casks. What beer spilled over was caught in another vessel and at times emptied. It took two min utes to fill each quarter of a barrel. A big elevator took the kegs up stairs where wnsons worn waitingnt the side walk for them. From this room wo entered a aeries of vaults , about 12 feet high and 100 square , dark , and with enormous casks of beer in rows , on each of which wa's a card tolling the quontity , time of brewing , etc. , and also n thermometer. The largest of these casks contain nearly 100 bar rels and cost § 100. A little gimlet peg allowed the beer to bo tasted by the brewer to see how well it had ma tured. The ice and snow were within . n few feet of our heads. Going down Kovornl steps wo saw an enormous cylinder of masonry crossing through , which was the street above our heads By the action of the brewery engine whatever water , yeasts , etc. , collected in the vaults was forced into this sewer above and went off like matter from the upper world. Wo walked half a block under ground to another great series of vaults , and there the ice and snow were as thickly encrusted as ever by I ho action of the same distant ma chine. Wo climbed up the ladders to the huge tubs of beer in different processes of solution or fermentation. In thn first stage it is merely malt tea , or a decoction of malt and water. Further on , when the yeast has boon added I , it become frothy at the top where the gums nnd resins have ascended. It seemed to mo that there were several acres of beer in various forms under the ground , and some ot the huge casks had been there twenty years. "Tho only difficulty with Now York boor , said my friend , "is that in the hot weather , when there is an im mense demand for it , it is furuishcd too now. "Beer ought to bo kept throe months , and wo try to keep it that lorn , ' . JJut with four or five hundred trade customers and a thirsty city , they draw on beer mercilessly in July and August. The yeast ought to bo thoroughly out of the beer before it is drunk. There la only about per cent of alcohol in beer and about MO per cent of alcohol in whisky. That ac counts for the popularity of lager beer. It is a fair compromise between total abstinence and alcohol. It especially seems to suit tlio zone of temperature corresponding to our AVostem and Middle states. " When we came out to the surface and looked at the clean copper kettle , carefully washed after every brow , I took un some of the barley already malted , and asked : "Why do you use this barley instead of wheat ? " "Any grain will make beer , " said the bruwur. "Wheat will make weiss buor. Wo use barley because Wo find it not only the cheapest grain , but it develops diastnsto and Htarch moat thoroughly. Thia grain of barley you see now is nothing but starch and a very little dinstiiitu , The diastase at- tnuku tlio rttarch and tump it into btigar , 'J'lieu the yeast has nuch a gluttony , for sugar that it makes car bonic nnd gas and alcohol of it. Wo stated nt the time tlmt the largest loaf of this plant , grown from seed put in the ground on the 20th of last April , measured seventeen fcot in circum foronco. Our contemporaries criticized cizod us as though wo were thn lineal descendant of thu celebrated Hat on lUimcluutscn , and had inherited all the lending traits of our noted ances tor. Thin treatment , of course , has been ns a thorn in our llesh ever since. Wo vowed that wo would get oven. Wo nro how ready to vindicate our honor as n truthful journalist. Yesterday wo measured that leaf in the presence of two witnesses-Mr. Higgins and Dr. Port. Its circum ference was twenty-olio foot and nine inches. There is no "shenanigan" about this. The plant is somewhat in the Rhapo of n palm leaf fan , with n smooth edge , and not full of deep scallops , ns has been surmised by those who had not scon it. Mr. Huggins , who was formerly an Iowa farmer of the old school , hns many other "bijj things" growing alongside of this pip plant.
