The chorus performs music from
Russian composers, notably those asso
ciated with the Moscow Synodal
School, a choral academy that merged
with the Moscow Conservatory.
Featured works will include those
by Tchaikovsky, Bortniansky.

Book blends Hemingway’s loves

Boreth’s narratives are topped only
by those told by Hemingway himself.
Passages are gathered from a variety
of books, stones and letters and ulti
mately make “The Hemingway
Cookbook" more like “The
Hemingway Scrapbook.’’
This actually makes the collection
worthwhile, since there is no way most
people would ever think about eating
some of Hemingway’s favonte foods.

in Armagnac requires, you guessed it,
four whole w oodcocks, preferably
w ith the intestines left untouched.
Apparently, it's somewhat difficult to
find supermarket woodcock these
days that still lias any guts.
The birds are slit open, rubbed
dowm with lemon, cooked and doused
in a mustard and Armagnac (brandy)
sauce.
Serve with eight pieces of bacon.
Several dishes call for a whole pig.
one for oxtails and a few for octopus.
Recommended preparation for that
last one: Roll one pound of octopus
into ball anti slam against a sink a
dozen times to tenderize.
Boil and serve at room tempera
ture.
The book even offers a helpful tip
for finding octopus: Seek out a
Portuguese mar ket near you
Hemingway's appetites weren’t
alw’ays so bloodthirsty, however.
Several vegetarian dishes appear scat
tered throughout the cookbook. They
include black bean soup, chestnut
puree and gazpacho (a spicy, chilled
soup from Spain).
surprisingly. Hemingway s
famous love for drink is relegated to
the back of llv cookbook and limited
to two chapters. One is dedicated to
wine and the other to mixed drinks.
Boreth confronts Hemingway’s
alcoholism up front in these chapters,
and acknowledges the role that booze
played in Hemingway’s final demise
and bouts w ith manic depression.
At the same lime. Boreth reminds
us not to forget that Hemingway’s pas
sion for wine and drink was a vital part
of his energy, and contributed just as
much to his work as it took away from
it in the end.
While they certainly are eye-pop
ping. the recipes w ill inspire only very
few to actually cook pork ‘n’ beans
spaghetti over coals, or to carve a meal
out of a lion’s butt

Hemingwav like we alway s have: by
simply reading.
