Earth Day Continued from Page 1 She said about 25 groups showed up for the booths and many students had been stopping to try the organic foods from Open Har vest grocery store. Open Harvest Natural Foods grocery store set up a grill to pre pare Boca burgers — a brand of imitation hamburger patties made from soybeans — and sell them along with cookies or organically grown fruit. Nearly everything sold lat the booth was vegan, which means it contained no animal products of any kind, Jean Helms said. Helms works in the bakery of the store and says the store tries to do its part every day to help the environment. “Most of the stuff we sell in the store is organic,” she said. “As far as Open Harvest policy, we try to buy products that have less pack aging and more organic produce in them.” She said that their customers came from a broad spectrum of the public. “This is what Earth Day has been about— educating people about what's going on." LISA WILLIAMS Ecology Now “A lot of people are out there eating healthy even if they don’t completely become vegetarians,” Helms said. “So a lot of new people are coming into the store, especially to try the organic produce.” Samples of an algae drink from Super Blue Green Algae were avail able at a nearby booth to wash down the vegan burgers. Representatives from the Peace Corps, Amnesty International, Ne braskans for Peace and the Wachiska Audubon Society were on hand to inform students about what they could do to help out all year long. Almost every booth had a sign-up list for interested students. Ecology Now set up an area for concerned students to voice their opinions to members of the Legis lature. Lisa Williams of Ecology Now said report cards on the different representatives were set up so stu dents could see how their represen tatives stood on the various issues. “We have about a hundred let ters so far," she said.ft'We expect to get about three times that much by the end of the day. We got a lot of letters yesterday in Omaha." On Sunday, a similar but larger gathering took place in Omaha, she said. “This is what Earth Day has been about — educating people about what’s going on,” Williams said. Along with the education pro cess that was involved in the cel ebration of Earth Day, this 26th annual event was observed with a special skit about the importance of recycling on the university campus. Members of Ecology Now and the Environmental Resource Cen ter constructed a Chinese-style dragon made of trash.
