erects itself and the pathos flows freely.
“The Mambo Kings” is filled with
memorable images, from Nestor
genuflecting as he walks in stow motion
into Puente’s nightclub, to a drunken
Cesar weeping in a photo booth as the
flash snaps around him. They are
clear, quick, and potent; much like
the film is. It is imperative to remem
ber that this is a melodrama, with
little room for subtlety. It’s an over
whelming experience that gets in your
face and under your skin.
That makes for a pretty bueno
movie.

Van Haien boys.
“As far as us and Van Haien, it
really clicks between the two bands,”
Parise said. “We gel along well, and
that’s important, I think.”
It’s not surprising that it should
“click” for the four members of the
baby animals, either. Parise, DcMarchi
and drummer Frank Dclenza are na
tives of Perth, the only major city on
Australia’s desolate western coast.
By her own admission, DeMarchi is a
product of her older brother’s record
collection: Black Sabbath, Queen,
Deep Purple.
“We grew up listening to the same
stuff,” Parise said. “I suppose that’s
why this band works, because we all
sort of have the same influences, and
likes.
“Also there wasn’t a lot going on
in Perth, at least when I lived there.
There were a lot of cover bands, so if
you were a musician, you were either
in a cover band or you moved to Los
Angeles or London.”
Prior to forming the baby animals.
Parise was in a siring of unrecorded
bands, trying to attract the attention
of record companies.
“I knocked around with some bands,
but Melbourne and Sydney arc really
the music capitals of Australia and
that’s where you need to be to get
anything done,” he said.
The baby animals will follow its
U.S. tour with an Australian tour this
summer, and a few European music
festivals—possibly England’s Read
ing Festival — in July.
Sunday night’s Van Halcn/baby
animals concert starts at 8 p.m. Doors
open at 7 p.m.

a positive work environment for his
staff.
“I’m not a king and (they’re) not
peasants,” he said, “And I’m not going
to treat (them) that way.”
And he says one of the key ele
ments of his job is "keeping the
employees satisfied and happy with
their job,” and “treating them with
respect.”
The other, of course, is producing
quality food. According to Russ that
means food that is well prepared, and
looks and tastes good.
The way it looks on the plate is im
portant, he says.
“It’s first impressions, ’ust like
with people, it’s the same vu y with
food. If it looks good and it tastes
okay, it’s going to taste better,” he
says.
In Europe there is a tradition of
fine food that in some way doesn’t
exist in America, or not in the same
way.
“In Europe chefs arc considered
with more respect,” Russ says,
“They’re regarded like a doctor or a
lawyer.”
Not so in the United States.
Here, he says, customers “aren’t
concerned with quality or taste as
much as quantity and price.”
But a chef has to think about all
those things.
“That’s the difference between a
chef and a cook, I think. A cook docs
his job for his hourly wage. For a chef
it’s a work of art, it has to be,” he says.
A chef wants “to be able to express
— be creative and have people enjoy
what you’ve done.”
Russ is president of the Nebraska
Chefs Association, which meets every
month for a seminar on some aspect
of being a chef.
For Russ that means much more
than wearing a funny paper hat and
lasting soup from a big pot.
It means a great deal of work —
he’ll spend 60 hours at it this week.
But he keeps doing it because of the
instant gratification he gets from
producing food that customers relish.
“I know I’m the kind of person
who needs that (gratification),” he
says.
And about those paper hats, what
do they mean?
“It goes back to Europe and I
couldn’t tell you,” he laughs. ‘‘It’s a
tradition and that’s about it.”
