New dairy store opens From Staff Reports The University of Nebraska-Lin coln Dairy Store has a new home on East Campus. The new store is located in the recently completed Food Industry Complex on East Campus, just north of 38th and Holdrege streets. The store is larger than the previous one. Visitors to the new store can watch ice cream and cheese-making from the observation corridor on the south side of the dairy plant. The ice cream production at the new plant will begin in September and other operations will be phased in later, said Dan Neumeister, associate director of UNL’s Food Processing Center. UNL’s first retail store, creamery and dairy processing plant opened in 1916 in the then-new Dairy Industry Hall, now called H.C. Filley Hall. Over the years, the store has pro duced cottage cheese, buttermilk, butter, cream and milk, as well as ice cream, cheese and yogurt. At one time, the dairy store furnished dairy products for all UNL residence halls and cafeterias. The dairy store provides hands-on experience for students in food pro duction and sales as well as facilities for dairy product research. Generations of dairy and food sci ence students got started in the busi ness while working at the store, which is a self-supporting operation. M. (Zim) Znamenacek, who has managed the dairy store and plant for most of his 26 years as the only non student employee, said as far as he knows, UNL is the only university that relies almost totally on student employees to make dairy products. Students not only dip the ice cream, but often invent flavors, he said. He said the store has made about 250 types of ice cream in the past 10 years. The dairy plant was housed in the Animal Science Complex during construction of the Food Industry Complex. The dairy store temporar ily has been housed in the Nebraska and East unions during construction. The East Campus store will re main open as long as there is a dem onstrated need, Neumeister said. The Nebraskan Union store will be closed and evaluated in January. Hours at the new store are: Mon day through Friday 9 a.m. to 10 p.m.; Saturday, 11 a.m. to 10 p.m., and Sunday 1 to 10 p.m. Award nominations being accepted University of Nebraska officials are accepting nominations for Awards for Outstanding Research and Creative Activity, a program started in 1978 by former NU Presi dent Ronald Roskens. The ORCA Selection Committee requires that nominators enclose five letters of support along with the nomination form. These letters must come from officials outside the uni versity. In addition, nominations must be seconded by an NU faculty member. The deadline for these nomina tions is Nov. 2.
