Deviled Eggs
12 hard-boiled eggs
2 teaspoons sweet relish
1/4 cup of medium onion, diced
1/3 cup of mayonnaise
1 teaspoon horseradish
1 teaspoon salt
1/8 teaspoon pepper
Cut hard-boiled eggs in half,
lengthwise. Remove yolks and
place in a bowl. Mash yolks with a
fork. Add remaining ingredients,
mix until blended and fill the egg
whites with the mixture.
Egg Souffle Salad
/ package lemon-flavored gelatin
1 cup hot water
112 cup cold water
2 tablespoons vinegar
112 cup mayonnaise
1/2 teaspoon salt
dash of pepper
5 hard-boiled eggs, diced
112 cup diced celery
1 tablespoon finely chopped onion
1 tablespoon chopped pimento
1 tablespoon diced green pepper
Dissolve gelatin in hot water.
Add cold water, vinegar, mayon
naise, salt and pepper. Blend well
with a rotary beater. Pour into a
freezing tray. Freeze for 15-20
minutes or until firm about 1 inch
from the center, but still soft in the
center. Put it into a bowl and whip
until fluffy. Fold in the remaining
ingredients. Chill until firm. Serve
with salad greens.
Tuna salad
12 hard-boiled eggs
9 sweet pickles
1 large onion
3 cans of tuna
3 cups of mayonnaise
Dice the eggs, pickles and on
ions. Mix everything together. Feed
an army.
Chili con qucso y huevos
1 pound hamburger
2 cloves garlic
112 of a medium onion
116 oz. can of whole tomatoes
2 8 oz. cans of kidney beans
6 hard-boiled eggs
114 pound processed cheese
Brown the hamburger with the
chopped garlic and onion in a large
sauce pan. Add the tomatoes and
juice; Also add kidney beans and
juice. Simmer from one hour to
three days. Before serving, chop
eggs and stir into the chili. Put
cheese on top, allow to melt.
If all else fails, feed the leftover
eggs to any unsuspecting household
pets.
Lincoln group to sponsor
free beach party, Thursday

The snow has barely melted off the
grass, but already Lincoln’s Updown
towners are sponsoring a Treasure
Island Beach Party Thursday night.
Music, dancing and a drawing for
a trip will probably draw 150 people
or more to the party, said Velma
Hackman, an administrative assistant
to the group.
Hackman said the group of about
260 members gets together every
month for social activities.
The dance is free and everyone is
invited to attend, she said. The dance
will also be a way of recruiting new
members, she said.
‘‘I imagine there will be a pretty
good turnout for the drawing,” Hack
man said. One couple will win a trip
for two to Cancun, Mexico, she said.
Hackman said she didn’t know how
long the trip will be, but the winner
will be able to pick the departure date.
Craig Estudillo will be the an
nouncer for the dance.
The dance is from 5 to 7:30 p.m. at
the former J.C. Penney building, 13th
and O streets.
