Wine can be used two ways: as a food, when consumed
with a meal, or as 3 beverage, if it is served aJone or with
light snack.
When used as a food, care should be used to match the
right wine with the meal. When this is done properly,
a complimentary relationship develops between the two.
A good place to experience wine as a food is your local
restaurant. Understanding the procedures in wine ordering
makes .for a fun evening of dining and entertainment.
Step by step, here are the reasons and procedure a
good restaurant follows when a bottle of wine is ordered.
J) Presentation (showing the bottle of wine to the
person who placed the order) - This is done so there is
no mistake. Acceptance by the person gives permission
for the next step.
2) Opening - Opening should always be done at table
side so the patron knows if there is a problem in opening
the bottle.
3) Presentation of the cork - The cork is the first
indication as to whether or not a wine is sound. A dry
cork may indicate the wine has been stored improperly;
a crumbly or soggy cork may indicate unpleasant things
to come. If the cork appears solid, (most corks will be
solid), there is no other procedure necessary. If the cork
looks bad, beware of the next step.
4) Tasting - This is done as a final test, merely to
determine the soundness of the wine and for the patron
to give final approval for the wine steward to serve the
other guests.
Many people ask about swirling the glass, gurgling,
swishing the vine in the mouth, etc. Your local restaurant
is not the time or the place to do all this. The four steps
indicated above are the only procedure necessary. After
all, the procedure is only to determine if the wine is
sound, not to conduct an international wine tasting. When
the wine is bad, it is quite obvious and should be gladly
replaced by the restaurant. If the wine is good, which it
usually is. it may not taste exactly like you may
remember it because wine is produce, and it changes
almost daily in the bottle. Also, because wine is produce,
it is necessary to go through the above procedure to sort
out the one bad apple in the barrel that may be present.

Lincoln: Capital of Nebraska, home of Big Red
athletics and soon to be on location for the shooting of
part of a Paramount Pictures movie.
The movie, "Terms of Endearment," features many
of the big names connected with all aspects of film
making. Based on a novel written by Larry McMuriry, it tells
the story of a college professor and his family, who move
from Texas to Iowa and eventually to Nebraska wlule
bus wife has numerous extramarital affairs.
McMurtry also is known as a writer for "The Last
Picture Show," and "Hud."
Jack Nicholson, Shirley MacLaine, Debra Winger,
Jeff Daniels and Danny Devito are some of the more
prominent actors and actresses who will be in the film.
Producer Martin Jurow is best known for his work
on "Breakfast at Tiffany's," the original "Pink Pan
ther," and "Hanging Tree."
Director James Brooks has directed such television
shows as the "Mary Tyler Moore Show," "Rhoda,"
"Taxi" and "Starting Over."
The director of photography, Andrezej Bartkowiak,
is also well-respected in his field. Some of his most recent

works include the filming of "Prince of the City," "The
Book of Daniel," which is due to be released this summer
and "The Verdict."
"Terms of Endearment" is budgeted at SS million.
About S2 million will be spent when Paramount comes to
Lincoln, Don Atw3ter, of the State Department of
Economic Development, said.
Atwater said the crews were to begin filming in
Houston in mid-March and are expected to begin work
in Lincoln on April 16th. Filming in Lincoln is to start
April 30 and should take about 30 days.
The exact schedule has not yet been worked out,
but Jurow is planning to use Lincoln General Hospital,
the UNL campus, another smaller Lincoln college campus,
a local shopping center, a small house and a farm, Atwater
said.
Elaine Carpenter, an aide to Lincoln Mayor Helen
Boosalis, said the mayor s office is trying to coordinate
city departments including the police and traffic depart
ments to help out once the location manager decides
where and when the filming will take place.
The movie company will be hiring extra production
workers and casting for extras to populate the shopping
center and college campus scenes, but the details have
not been worked out for this.
