Research on frying oils done in residence halls Residence halls at UNL have been cooperating in a study of various frying oils used to prepare foods, accord ing to A.P. Handel, assistant professor in the Department of Food Science and Technology. Residence halls are a good site to conduct an evalua tion of frying oils, because the halls use about 6,000 gal lons or $25,000 worth of frying oils every year, Handel said. "The oils are tested under actual use, using the regu lar menu items that are served the students," he said. Gold medalist says respect of self needed Native Americans need to realize their purpose, said Billy Mills, an Oglala Sioux and Olympic gold medalist Wednesday night in the Ne braska Union. Mills spoke at the beginning ceremonies of the first annual Nebraska Native American Student Congress, which ends Sun day. A basic philosophy for Native Americans is impor tant in realizing that pur pose, Mills said. A positive mental attitude also is need ed, he said. "How you feel about yourself determines how you will communicate with other people," Mills said. "Without a positive mental attitude, we will suffer grave consequences.'" It also is important to set goals, Mills said. As an ex ample, he mentioned George Young, who compe ted in the steeplechase in the 1958 Olympics. Young's noal was to place in the competition, Mills said. He failed to do that by 0.2 seconds. Young returned to the games and ran his fast est time -ever, but was un able to place again. After this loss. Young quit for a while, but later returned to capture a bronze medal, Mills said. In attempting to achieve a goal obstacles will always arise, Mills said. "Quitting is a human re sponse; however, one must work through it," he said. "If you are rejected, you are bound to crumble. How ever, with support from the family, the school or the church, one can surmount this problem." Native Americans also need to accept defeat with dignity, Mills said. Ron Clarke was able to do this. Clarke was expected to win the race in which Mills re ceived his gold medal. But Clarke came in third. Some people thought Clarke had failed, Mills said, but he went on to break 12 world records. Finally, Mills said, people need people. "If you reach out and touch someone, it is more gratifying if someone reach es back," he said. "We have to have indi vidual strength, because at times even people in your family do not believe in you. In order to win in all aspects of life. Native Amer icans must identify who they are." J
