If you don't particularly like liver, you might try Kerrey's chicken-fried liver recipe which follows. Kerrey has used the recipe for years in her college home economics classes and said it is one way many stu dents like liver. ' When you cook for yourself, biscuit mix may be a good buy because of its many uses. When you buy beverages, instant coffee is cheaper than regular coffee and tea is cheaper than either. Frozen orange juice is usually a good buy, Kerrey said, and you need not use a whole can at once, but use as much as needed and freeze the rest Most foods cannot be kept longer than several days in the refrigerator. To keep leftover pizza, wrap in tightly in plastic wrap or aluminum foil and freeze it Don't refrigcr- ate it. It might make the crust stale. Reheat it in the same foil, or if dry, reheat in a baking dish on a small grill. Put a little water in the bottom and an aluminum foil tent over the top. Hundreds of free pamphlets are available from the Agricluture Dept., country extension service and food manufacturers on how to plan and prepare hundreds of low-cost and tasty dishes. Their offices may also be able to help you with specific problems in food preparation or food storage. Following are just a few suggestions for new things to try in the kitchen. Often just using your imagination and adding a garnish or different spices to an old dish will make it seem speciaL To spice up a meatloaf, top it with a special sauce just before it is done baking. Top it with golden mushroom J i soup, mushrooms, a little cheese or garnish with green olive slices, sprigs of parsley or wedges of boiled eggs. Give your hamburgers a little variety by adding oregano, prepared mustard, soy sauce or spiced tornado sauce before cooking, or stuff with onions, rice cooked in beef broth or bits of cheese. Dress up vegetable dishes by L.g several drops of lemon juice before serving, stirring a little left over cream soup, or add a butter sauce with paprika or chopped parsley. Make a plain meal special with a quick salad or soup. Gelatin salads are quick if you substitute six ice cubes for one cup cold water. They can be heartier if bits of chopped vegetables or fruit are added when it is almost set. , To add a special touch to onion soup, line the bowl with a little mild cheese, pour in hot soup, and top with buttered and toasted bread. Dress up a lettuce salad with a few capers, carrots, beans or cauliflower and an oil and vinegar dressing. Strips of bread topped with mild garlic butter and toasted or broiled make great croutons for either soup or salad. Use your imagination to dress up any thing-even if you are only cooking for yourself. If it does not look good, it will not taste as good. Following are several ideas for quick main courses: Shrimp Creole Rinse a can of small shrimp, which is usually cheaper than larger shrimp. Stir the shrimp in with a can of Spanish tomato sauce, heat, and serve over cooked rice. Stretch the shrimp by using only half a can in the Creole and using the other half in a salad. Tuna Salad (serves two) one 6 oz. can chunk tuna 1 -1 J4 tbsps chopped onion 1 hard boiled egg, finely chopped 1-2 tbsps. chopped pickles, green olives, or black olives Mayonaise - Drain tuna. Add onion, egg and pickles or olives. Add just enough mayonaise to make it spread able and serve on bread. Leftover tuna salad can be kept for two or three sys if it is thoroughly cooked. Make hot tuna sandwiches by putting the salad on bread or English muffins, and boiling until heated thoroughly. Top with a slice of cheese and place under the boiler again until cheese is melted. Chicken Fried Lhwr - (2 servings) beef liver 1 tbsp. flour 2 tsps. lemon juice tsp. salt sprinkle of pepper sprinkle of garlic salt 1 egg. well beaten; 2 tbsps. evaporated milk (or use regular if you don't have evapor ated) 212 cup fine cracker crumbs 1-2 rbsps. minced onion ". 1 sp. fat (margarine, oil, bacon fat) Sprinkle liver with lenun juice. Combine flour with seonings. Mix eggs and mi!k together. Roll Ihw in flour then dip in egg mixture and cracker crumbs. Add onions and brown in hot tat until cooked through but still moist inside. May I borrow a cup of. . . Although it is best to always use the recipe's ingredi ents, in case of an emergency or lack of grocery money, here are a few substitutes to try. Substitute: -1 cup minus 2 tbsps all-purpose flour for 1 cup cake flour. -Vi cup evaporated milk and H cup water, or 1 cup re constituted non-fat dry milk plus 2 tsps butter for 1 cup whole milk. . -1 tsp. lemon juice or vinegar plus sweet milk to make 1 cup (let stand several minutes) for 1 cup sour milk or buttermilk. -2 tbsps. cocoa plus 1 tbsp butter or margarine for 1 square unsweetened choclate. -Va tsp. baking soda plus XA cup sour milk to replace M cup liquid for 1 tsp baking powder. -1 tbsp. prepared mustard for I tsp. dry mustard. 2 tbsp. flour or 4 tsps. quick-cooking tapioca for I tbsp. cornstarch (to be used as thickening). -1 tsp. dried herbs for 1 tbsp fresh chopped herbs. -18 tsp. garlic powder for 1 clove garlic. -1 cup tomato sauce plus Vi cup sugar plus 2 tbsps. vinegar for 1 cup catsup of chili sauce. -2 egg yolks for 1 egg. -V cup sugar plus cup liquid for 1 cup honey. 3D .
