UNL studies dietary habits

Those few people who carry funny bags
around campus all day are providing an
important service. UNL is one of 'Very few
schools to do food diet study," said Con
stance Kies, professor of food and
nutrition.
The bags are used to collect urine
-samples to test results of the department's
experiments.
"We have been doing food studies since
the '30s," said Mazel Fox, chairman of the
Food and Nutrition Dept.
Volunteers are recruited through ad
vertisements and placed on a special diet
for certain lengths of time, she said. Fox

to different foods," Fox said.
The program is financed, with $10,000,
through the Nebraska Experimental Agri
culture Station, which is part of the UNL
budget. The department also receives
grants from the federal government and
businesses, Kies said.
The current experiment is testing the
effect of fiber on zinc, Fox said .
"We think zinc may be low in our diet,"
she said.
Kies said the results will be published
and levels of zinc in food will be
recommended.
