UNL's slice of
Efforts of some UNL students this semester
are turning to cheese.
The students are food science and technology
and food and nutrition majors who process
cheese in the Food Pilot Plant at the East
Campus. Located in H.C. Filley Hall, the plant
produces about 30,000 pounds of cheese each
year. .
Allen Evans, plant manager, said the
cheese-making process is not affiliated with any
particular class. The students are not required,
but are encouraged to work at least one semester
in the plant, he said.
Dairy research
Twenty five to 30 students work part time at
the plant. In addition to processing cheese, Evans
said, the students also do dairy research.
Evans, an extension economist in food
marketing, said all types of American cheese are
processed at the plant except Bleu. The cheeses
include Colby, Husker, Edam, six types of
Cheddar and Swiss.
Husker cheese, developed at the plant in
1940, appears to be the most popular, he said. It
is a mifd, high-moisture cheese.
Evans said different types of cheese are made
when the need arises. About 2,500 pounds of
cheese are made each month, he said.
Cheese sold
The cheese is sold in a small dairy store in the
life-
cheese
south section of Filley Hall. Ice cream, also made
in the plant, and milk arc sold in the store."
"We have sold cheese to every state in the
union except two," Evans added.
Milk used in the cheese-making process is
purchased from local Lincoln farmers. The
different bacteria used for preservation and
flavor, the time spent in the processing steps and
the extra-added ingredients produce the different
cheese varieties, he said.
Because of the facilities needed for cheese
processing, Evans said it would be difficult for
the average person to make it at home. He said,
however, he. has seen cheese-making kits at
several downtown stores which can make
Cheddar cheese.
'Good quality
Evans said reaction to the cheese has
"generally been very good and customers believe
it is good quality cheese.
"The period between Thanksgiving and
Christmas is when the big share of our cheese is
purchased," he said, explaining that many people
buy the cheese for Christmas gifts.
Although Evans said they sell all the cheese
they make, he said- the plant does not do enough
business to hurt anyone.
"We try to operate on whatever the market
price is," he said, "and we don't undercut the
market."
