weekend, Sept. 20. 21 & 22, at the Nebraska Union
Bowling Alley.

Hints for
successful
cookie
making
Cookies, a simple but ever-popular snack, are
the main feature in Toothpicks this week. Along
with some hints for successful cookie making,
three basic recipes and their variations will be
included.
Ingredients should be at room temperature
before beginning. Baking sheets should be shiny
and should have very low sides for the best heat
circulation in the oven. When baking more than
one sheet at a time, reverse the position of the
pans wnen cookies are half done to insure more
uniform browning. ,
Cool the baking sheets before re-using them, or
the shortening will melt and cause the cookies to
spread and run into each other. Do not grease a
cookie sheet unless the recipe calls for it.
Cookies will store better if they are cooled on a
wire rack, (one from your refrigerator will do)
before placing them in a tightly covered container.
If you are adventurous and have baked both hard
and soft cookies, be sure to put them in separate
containers. Keep soft cookies soft by adding a slice
of bread to the container before storage. Hard
cookies that have become soft can be revitalized by
placing them in a 300 oven for about 5 minutes.
3ASIC BUTTER COOKIES
2 cups sifted all-purpose flour
1 1. baking powder
V 1. salt .
cup butter
1 cup sugar.
1egg . 1 "
V cup milk 1 '
1 1. vanilla extract
Sift flour with baking powder and salt. Cream butter in
mixing bowl. Gradually add sugar and continue crearmng
until light and fluffy. Add egg, milk, and vanilla extract, and
beat well. Blend in sifted dry ingredients gradually. Drop by
rounded teaspoonfuls onto ungreased cookie sheets. Bake at
375 degrees for 10 to 12 minutes until golden brown. YEILD;
About 48 cookies.
VARIATIONS:
Coconut Cookies: Stir in IV2 cups packaged flaked coconut
after blending in sifted dry ingredients.
COCONUT COOKIES: Stir in IV2 cups packaged flaked
coconut after blending in sifted dry ingredients.
ORANGE PECAN COOKIES: Blend in V2 cup chopped
pecans and 2 tablespoons grated orange rind with sifted dry
ingredients.
LEMON NUT COOKIES: Blend in Vz cup chopped nuts and 2
teaspoons grated lemon rind with sifted dry ingredients.
. CHOCOLATE CHIP COOKIES
2 cups sifted all purpose flour?
1 1. soda
Vz t. salt
V cup butter or margarine
1 cup firmly packed brown sugar
1 egg
1 V2 t. vanilla extract
1 Vz cups (6-oz. package) semi-sweet'chocolate pieces
Vi cup chopped nuts
Sift flour with soda and salt. Cream butter in mixing bowl.
Gradually add sugars and continue creaming until light and
fluffy. Beat well. Belnd in sifted dry ingredients gradually.
Stir in chocolate pieces and nuts. Drop by rounded
teaspoontuls onto grpased cookie sheets. Bake at 375 degrees
for 10 to 12 minutes until golden brown. YEILD: About 42
cookies.
Cookies with ice cream make the perfect simple
dessert. The butter cookie recipe is by far the most
elegant, and the lemon-nut or orange-pecan types
can be served for a variety of occasions.
Toothpicks would like to appeal now to its
readers for help. We need a good recipe for
spaghetti sauce. We are also interested in the
creative uses of small appliances such as pop corn
poppers, coffee pots and Irons for snacks and
Sunday night suppers. Please send me your

Students to debate tree harvest
Students will debate the genera!

(ABC) in an effort to save cottonwood
trees along the Platte and Missouri
Rivers, the Environmental Task Force
(ETF) chairman said Tuesday.
The Nebraska Environmental Coali
tion and ETF will co-sponsor a debate
Saturday at 10 a.m. In the Nebraska
Union with Robert Crosby, general
manager of ABC. Crosby will answer
questions about ABC harvest of the
trees along the Plaite and Missouri
Rivers, ETF Chairman Rob-Aiken said.
Aiken, a botany major, heads ETF, a
subcommittee of the ASUN Senate
Student Services Committee. The nine
member committee works for public
awareness in ecological matters through
debate. Aiken said.
Other projects ETF may work on
include a pamphlet directed to students
daily nebraskan
about Lincoln environmental groups,
recycling of cans from campus food
services and blocking of an environmen
tal group bill being considered for
introduction in the State Legislature,
Aiken said.
The bill would require environmental
groups to post bond or security to cover
costs of government legal expenses.
Aiken said if the bill passes, environ
mental groups would have to pay court
fees in taking to court government
projects that the group considered
harmful to the environment. According
to the proposed bill, the groups also
would pay production costs companies
would incur when production is delayed
by court action, he said.
