Start with some milk, say 300 gallons. Add a little bacteria,
maybe three or four cultures. Throw it in a coagulator.
After a few minutes, collect the curdles. Proceed through three
or four more processes; then say "cheese"-the Swiss kind, complete
with eyes (holes, in layman's terms).
This is the University of Nebraska method of manufacturing
cheese, as explained by T.A. Evans, associate professor of Food
Science and Technology.
Evans and his students began making Swiss cheese last spring.
They were already well acquainted with the simpler cheese-making
processes, such as chedder, he said.
Since that time, they have completed four batches of Swiss
cheese, although only one has been packaged and sold through the
East Campus Dairy Store, he said.
The holes, by the way, come from gas created by one of the
bacteria cultures.
