(pill btirgamt Russian soup tasty I love soup. It is a dish that comforts the eye, the stomach and the wallet as well. One of my pet summer soups is of Russian orgin, quite tasty, and highly refreshing. Remember the key to a memorable soup is the improvisation the cook institutes. BOTVINIA This soup was originally of Polish extraction, but for the past hundred years or so, has been naturalized Russian. It is served chilled, often with crabmeat or shrimps. dovid wore 6 young, uncooked beets with tops 1 lb. Spinach juice of one lemon 2 sweet-sour pickles Wash and chop the spinach and beet tops. Peel and dice the raw beets. Bring the water to a boil, add the vegetables, salt, pepper, dill and sugar. Cook for about 15 minutes, or until the vegetables become tender; then rub through a sieve. Add the wine, lemon juice, and the pickles, which should be diced. Chill, then serve cups topped with sour cream sprinkled with paprika. R. Neale Copple, director of the UNL School of Journalism, will work from Sept. 1, 1973 to June 30, 1974, as a liaison between the University and the Legislature, Zumberge said. He said Copple would still remain as School of Journalism director. "I asked him to accept the job because he has a high level of integrity and this job requires credibility, integrity and a professional approach," Zumberge said. He said Copple would not be a lobbyist, but would act as a journalist in trying to provide information for legislators. He said he hoped Copple would help establish budgetary credibility with the Legislature. "I've always loved politicians,"' Copple said. "I'm anxious to get started. I see myself as a transmitter of information and this is what I will concentrate on doing in this job." Copple said he plans to keep his two jobs separate. He said Prof. Wilma Crumley, School of Journalism assistant director, would be responsible for news judgement on stories about University budget matters handled by the school's publications or its radio station, KRNU.
