    High-priced meat translates
into poor diets for students
Anyone who passed the fifth grade knows
that the daily diet should consist of foods
from four basic groups: protein, fruits and "
vegetables, cereals and dairy products.
And any grocery shopper knows that
protein items compose the biggest part of
the bill. Why? Because most of the protein
in the American diet comes from meat And,
these days, meat is expensive.
Recent studies show that for the average
American, meat costs are one-fourth of his
entire food budget Translated into the
terms of a college student's budget this
could mean either a monotonous diet or
inadequate nutrition.
But there is a way to beat the high costs
and still enjoy protein-rich meals. Instead of
meat, serve vegetable proteins. Vegetables
include legumes ' (beans, peas) and nuts.
Health food fans also are familiar with
another vegetable protein : soybeans.
With the creation of textured vegetable
protein (TVP), protein can be extracted
from plants normally considered inedible,
such as alfalfa, soybeans or seaweed.

The unpleasant flavor associated with
these is removed, and more palatable flavors
such as beef or ham are artifically added.
Baco Bits is the brand name of one such
product. .
Vegetables are more than economical.
They provide variety in texture and add
flavor to your meals. They can be preserved
lonaer and are lower in fat content than
meat Except for TVP, they are available
almost every where. Because TVP is relatively
new, one may have to go to a specialty store
to find it -
Now that you know that a bean eaten is a
penny saved, try your luck with these easy
recipes.
Peanut Butter French Toast
V cup peanut buttw
4 slices of bread
1 egg
V cup milk
18 tsp. salt
margarine or butter
Spread peanut butter on two slices of bread; put
other slices of bread on top to make two
sandwiches. Mix eggs, milk and salt. Dip sanwiches
in egg mixture. In a little fat over low heat, brown
sandwiches on both sides. Makes two servings.
Open-Face Beanwiches
3 hamburger buns, split and toasted
1 1 frounce can barbecue beans
6 slices processed American cheese
6 partially cooked bacon strips
Spread hamburger buns with beans. Top each
with a slice of theese and two pieces of bacon.
Broil slowly about six inches from heat until bacon
is crisp and cheese is brown and bubbly. Makes six
open-face sandwiches.
Variation: Omit bacon. Substitute thin slices of
tomato or onion.
Baked Soybeans
2 cups dry soybeans
6 cups water
1 tsp. salt
1 onion, chopped
pound salt pork or ham hock
3 tbsp. molasses
1 tsp. dry mustard
2 tbsp. ketchup
Rinse beans, combine with water and bring to
boil. Simmer for two minutes. Set aside for one
hour. At the end of this time combine with salt,
onion and salt pork. Simmer until beans are tender
(about three hours). Transfer to casserole, add
remaining ingredients and continue cooking in
oven for one hour at 325 degrees.

Humphrey Bogart received an Academy Award
nomination for his portrayal of the paranoiac Captain
Queen in this dramatic tale of high-strung tension
aboard a U.S. Navy destroyer during World War II.
Bogart turns in a sensitive and intelligent performance as
the commander whose irresponsible actions lead to
mutiny, with Fred MacMurray, Van Johnson and Jose
Ferrer outstanding in supporting roles. The Came
Mutiny," directed by Edward Dmytryk and based on he
novel by Herman Wouk, was nominated for the
Academy Award as Best Picture of 1954 and is excellent
in its depiction of the extremes to which the individual
personality can be pushed in the unnatural sphere of
war.
