University dormitory resl
dents consume one hundred
thousand pounds of dairy pro
ducts each month according
to Kay Nilson of the Dairy
Industry milk lab.
"During vacations when a
lot of students have gone
home," said Nilson, "we make
cheddar by the hundred
weight."
Cottage cheese is made in
three hundred pound batches
each weekend, he added.
The three thousand dorm
residents eat about 125 gal
lons of bulk ice cream a week
and that's only vanilla and
chocolate.. The milk lab also
makes other flavors, said Nil
son, but not in wholesale lots.
"We usually don't make a lot
of special flavors such as Or
ange Velvet unless we get
an order for it," he noted.
The University makes only
small amounts of its two
dozen special flavors and
these are sold through the re
tail store on the south side
of the Dairy Industry build
ing. "Our retail business
amounts to only two percent
of our volume," commented
Nilson.
The milk lab's sole function
is not providing the campus
with dairy products, however.
The department has a three
year grant from the Ameri
can Dairy Association for
study of water-soluble vita
mins in cheese.
"Not much work has been
done with the water-solubles."
stated Nilson, "because they
are so hard to assay." "They
occur in very small amounts
in order to get a trace of

liters of water."

soprano; Jose Greco, well
known Spanish dancer; the
Robert de Cormier singers,
formerly associated with calypso-recording
artist Harry
Belafonte; and the Cincinnati
Symphony Orchestra.
