Be sure the water is boiling before
you begin to count the time. The
water should cover the jars. Just
as soon as the time is vp remove
the jars, tighten, and invert them to

are cool, wrap with paper and store
in a dark place.
How to Can Rhubarb
Wash jars and lids. Hace a wash
boiler containing 7 or 8 inches of
water on the stove to heat.
Wash the stalks clean. Cut them
in pieces. Do not removethe skin
unless rhubarb is real old. Tie the
rhubarb in a thin cloth and place
into a kettle of boiling water for 2
minutes. Lift the cloth from tne
boiling water and place in a pan of
cold water for one minute. Remove
from the cold water and wntie the
cloth.
The next step is to pack the rhu
barb tightly in the jars. Pour on
hot syrup to Vi inch of the top of
the jar. Place on the rubber and
cover. If the jar is a Mason screw
the lid on as far as you can using
the thumb and little finger or until
it just catches. This should not be
tight. If the jars are of the "spring
top" typo clamp one of the wires over
the lid leaving the other wire up.
Now place the jars on a false bot
tom of warm water and cook for 20
minutes. lo not begin to count time
until the water really boils around
she jars. When the sterilization
wriod is over remove the jars from
the boiler one by one and tighten
the lids. Do not remove the tops
even though the jar is not full of
the liquid. Invert the jars to cool
and to test the joints for leakage.
Wrap in paper and store in a cool
dark place.

makes a medium thin syrup.
One cup sugar to t cup water
makes a medium thick syrup.

How to Can Dandelions
Wash jars and lids. Place a wash-

and clean freshly gathered dande
lions and tie in a thin cloth. Place
in a kettle containing a wire rack
and sufficient bailing water to come
ud to the rack. Cover the kettle
with a tight fitting lid and allow
dandelions to steam for 20 minutes,
lift the cloth from the steaming ket
tle and nlace In a nan of cold water
for two minutes then remove and
squeeze out the excess water.
The next step is to pack the dande
lions tightly in the jars to within
one half inch 'of the top of tLe jar.
Add salt in the proportion of one
level teaspoon for each quart. Place
on rubbers and covers. If the Jars
tre Masons screw the lid on as far
as you can with the thumb and little
finger. This should not be tight. If
the jars of the "spring top" type
clamp one of the wires over the lid
leaving tb other wire up.

tom in the washboiler of warm water.
Sterilize one and one half hours. Do
